German Potato Dumplings | RECIPE
These dumplings taste just like mashed potatoes but more compact. They are firm and creamy at the same time. This is a more interesting way to serve the mashed potatoes and very easy to make. I highly suggest serving the potato dumplings with gravy.
Ingredients:
500g potato
100g corn starch
1 egg yolk
2 tbsp butter
1 tsp salt
handful coriander
Instructions:
1. Cook the potatoes for 15-20 minutes or until tender. Drain and transfer to a large bowl.
2. Mash potatoes. Add butter, stir in corn starch, egg yolk and salt. Shape into six balls.
3. In a Dutch oven, bring 7-8 cups of water to a boil. Carefully add dumplings. Reduce heat, simmer, uncovered, 4-5 minutes as the potatoes have been already cooked.
4. Meanwhile, in a small saucepan, heat butter and chopped coriander. Then our over the dumplings. Serve and enjoy!

Vareniki – Ukrainian Potato Dumplings
Vareniki or varenyky are traditional Russian and Ukrainian dumplings. There are many different types of vareniki; potato vareniki, cheese vareniki, cherry vareniki and more. This dish is also very common in Poland, they call it pierogi and they make it pretty much the same. Vareniki are usually served with sour cream and fried onions. This recipe is the classic version of homemade vareniki and they are perfect for weekend breakfast or brunch.

Ingredients:
For the dough:
2/3 (160ml) Warm water
1/2 teaspoon Salt
2 cups (250g) Flour
2 tablespoons Oil
For the filling:
400g Potatoes, peeled
2 Onions, chopped
Salt to taste
Pepper to taste
For serving:
Sour cream
Directions:
1. Make the dough: In a small bowl, mix warm water, salt and oil. In a separate large bowl, place flour, make a well in the middle, then pour the wet mixture into the well. Mix until smooth dough is formed.
2. Set aside to rest while making the filling.
3. Make the filling: fill a medium-large pot with water, add 1 tablespoon of salt, add potatoes and bring to a boil. Boil until tender.
4. Place boiled potatoes in a large bowl and mash.
5. In a medium sized pan, heat 2 tablespoons of oil, add chopped onions and cook until golden.
6. Add 3/4 of the onions to the mashed potatoes, season with salt and pepper and mix well.
7. Assembly: divide the dough into 4 pieces. Roll each piece into a 1/8cm thick. using a glass or a cookie cutter, cut 6-7cm circles. Fill each circle with 1 teaspoon of filling. Seal the dough and repeat with the rest of the dough.
8. Cook the vareniki: boil a large pot of salted water. Add the vareniki the boiling water and boil until floats. Drain.
9. Serve with the rest of the fried onions and with sour cream.

Potato dumpling is a typical side dish to many Czech meals.
I recommend with roasted lamb, beef, pork and stewed sauerkraut or it is very delicious with spinach puree.
But again, there are many variants for use.
Maybe the recipe will now look a bit tricky, but don't worry, it's surprisingly simple and fun, as you can see in the video.
Some problem is probably getting the right flour. Czech dumplings are made from a Coarse flour (Hrubá mouka), which is not so common elsewhere in the world. The good news is that it can usually be found in your local Eastern European Store and costs about £ 1 [1kg]. If they do not have it a good merchant will certainly order it for you. You can also buy it on the Internet. The third way is to replace the Coarse flour with Flour and Semolina in a ratio of about 1:1, but it takes a little experience to get it right and also working with the pastry can be a little more difficult. My personally choose an easier way and buy Coarse flour at a local Polish shop (where I also buy Czech spirits vinegar 8% and Czech mustard called Plnotučná hořčice - I also sometimes use these ingredients in my recipes).
The second trick is that after the dumpling is rolled, it is necessary to immediately put it in boiling water so that it does not soften with heat. This is the difference between raising and potatoes dumplings. Here, the rule is that boiling water waits for potato dumplings.
