How to Make White Bean Soup For One
Single serving white bean soup recipe made with just 1 can of beans. Quick, easy to make and filled with flavor. Ready in 30 minutes!
✴️ Printable Recipe:
✴️ Ingredients
1 slice bacon ,cut into ¼-inch strips
1 teaspoon olive oil (optional, if not enough grease is left over from the cooked bacon)
¼ cup chopped onions
1 clove garlic ,minced
¼ teaspoon dried rosemary
⅛ teaspoon coarsely ground black pepper
1 (15.5-ounce can) white beans , rinsed and drained (also called Cannellini beans)
¾ cup low sodium chicken broth
✴️ Instructions
1) Cook the bacon in a 2-quart saucepan over medium-high heat, stirring occasionally, until crisp, about 3 minutes. Transfer to a paper towel-lined plate with a fork or a slotted spoon.
2) If there is not enough of the bacon drippings left in the pot, add 1 teaspoon of olive oil. Add the chopped onions and cook, stirring occasionally for 3 minutes. Stir in the minced garlic, dried rosemary, and pepper. Cook for 1 minute more.
3) Add the drained beans and broth. Bring to a boil over medium-high heat. Reduce the heat to low and simmer, stirring occasionally for 15 minutes.
4) Using the back of a spoon, smash the beans slightly to thicken the soup. Pour the soup into a bowl and garnish with the cooked bacon. Enjoy hot.
✴️ Expert Tips
A) I did not use salt in this recipe. Taste the soup after you make it and add salt to taste. Depending on the broth you use, you may or may not need to add salt.
B) If you have any vegetables on hand that you need to use up, feel free to chop them and add them to the soup.
C) You can use diced ham instead of bacon. Sauté it along with the onions and garlic.
D) If you find the soup to be too thick, add a little more broth or water.

BLACK BEAN SOUP is a vegetarian soup that's SO DARN good!
This black bean soup is a vegetarian soup recipe that's humble yet dazzling. It's layered with savory and spicy flavors, and can be made in about 30 minutes.
Black bean soup is a staple recipe in many countries around the world. There are versions from Mexico, Spain, Puerto Rico, and other countries in the Caribbean and Latin America. My recipe is heavily influenced by traditional Cuban black bean soup recipes, but of course, I've tweaked it a bit to my liking!

15 Bean Soup - Recipe below
Recipe and List of Beans
Northern, Lima, Yellow Eye, Garbonza, Green Split Pea, Kidney, Cranberry, Small White, Pink Beans, Small Reds, Yellow Split Peas, Lentils, Navy Beans, White Kidney, and Black Beans
*****************************************************************************************************
Ingredients
• 1 pkg Hurst’s HamBeens® 15 BEAN SOUP®
• *7-10 cups water (use chicken, beef, or vegetable broth for added flavor)
• 1 large or 2 small smoked turkey drumsticks
• 1 TBS minced garlic
• 1 celery stalk
• ½ cup each of chopped red and green bell peppers
• 1 medium-sized carrot, chopped
• 1 shallot, diced
• 1 medium onion, diced
• 1 teaspoon sea salt
• ½ teaspoon course black pepper
• ½ teaspoon of dried thyme
• ½ teaspoon of dried rosemary
• 1 bay leaf
• 1 (15-oz) can diced tomatoes *I forgot to mention in the video
Cooking Directions
***SEMI SOAK METHOD***
1. In a colander or sieve, rinse beans thoroughly. Sort and inspect for any unwanted debris and discard.
2. Drain and pour beans into a Dutch oven or stockpot and allow to soak for 4 hours.
3. Rinse again then place the beans in a pot of boiling water. Allow to boil for approximately 5 minutes then add beans only to a slow cooker with 10 cups of stock or water
4. While beans are quick soaking, add all other ingredients EXCEPT tomatoes to slow cooker and set to medium heat. Use between 9-10 cups of liquid if you like a more brothy soup.
5. Strain beans then add to slow cooker. Stir to combine. Set slow cooker on high and cook for 2-3 hours then check to make sure beans are tender. The soup can continue to simmer for several hours and will develop more flavor over time.
6. After the beans are tender, remove the turkey legs and cut meat from the bones, stir in the can of diced tomatoes.
7. Cook for an additional 15 minutes then keep warm until ready to serve.
8. Serve with a freshly baked slice of cornbread! You can also serve over rice as well.
Note: As with all dry bean recipes, it's best to wait until AFTER the beans have become tender or fully cooked before adding any acidic ingredients like tomatoes.
If you prefer to soak overnight, just use 1 cup of water/stock less.
