TASTE OF HOME 4/5/94:
2 Eggs; separated
2/3 c Shortening
1 1/2 c Sugar
1 c Mashed ripe bananas (2 to 3
Medium) 1 1/2 c All-purpose flour
1 ts Baking soda
1/4 c Sour milk*
1/2 ts Vanilla extract
1/2 c Chopped walnuts, optional
Whipped cream and sliced Bananas; optional In a small mixing bowl, beat egg whites until soft peaks form; set aside. In a large mixing bowl, cream shortening and sugar. Beat in egg yolks; mix well. Add bananas. Combine flour and baking soda; add to creamed mixture alternately with milk, beating well after each addition. Add vanilla. Fold in egg whites. Fold in nuts if desired. Pour into a greased 13x9x2" baking pan. Bake at 350 degrees for 45-50 minutes. Cool on a wire rack. If desired, garnish with a dollop of whipped cream and a few banana slices. * = To sour milk, place 1 tsp. white vinegar in a measuring cup. Ingredients
Bars
1/2 c. butter softened
2 c. sugar
3 eggs
3 medium ripe bananas
1 tsp vanilla
2 c. all-purpose flour
1 tsp baking soda
Pinch of salt
Frosting
1/4 c. butter softened
4 oz cream cheese softened
2 1/4 c. powdered sugar
1 tsp vanilla extract
Instructions
Preheat oven to 350 degrees F.
In a mixing bowl, cream butter and sugar. Beat in eggs, bananas and vanilla.
Combine the flour, baking soda and salt; add to the creamed mixture and mix well.
Pour into greased 15 x 10 x 1 inch baking pan.
Bake at 350 degrees for 25 minutes or until bars test done. Cool.
For the frosting cream butter and cream cheese in a mixing bowl. Gradually add confectioners’ sugar and vanilla. Beat well. If you want it thicker add a littler more confectioners’ sugar. Spread over bars.

1½ medium overripe bananas - puréed

½ cup heavy cream - room temperature
2 large eggs - room temperature
½ cup sugar
1 tbsp pure vanilla extract
1 tbsp cornstarch
Custard and Toppings:
12 oz evaporated milk - 1 can
3 large egg yolks
½ cup granulated sugar
2 tsp pure vanilla extract
4 tbsp salted butter
1 tbsp cornstarch
