How To make Banana Cream Pie~
8 Ounces Short Or Flaky Pastry
4 Ounces Sugar
4 Teaspoons Cornflour
1 Pinch Salt
1 Pint Milk
3 Egg Yolks
1/2 Ounce Butter
1/4 Teaspoon Vanilla Essence
3 Medium Bananas
2 1/2 Fluid Ounces Double Cream
Roll out pastry to fit an 8 inch pie plate. Flute edges and bake "blind" that is, bake without a filling. To preserve shape of pie, fit a circle of greaseproof paper into pastry-lined dish and fill with dried beans. Remove paper and beans for last 5 minutes of baking time - about 25 minutes in all.
Meanwhile, make the cream filling.
Mix sugar, cornflour and salt together in a saucepan. Add milk gradually. Stir until mixture comes to the boil and for 1 minute longer. Stir half of the mixture into the slightly beaten egg yolks. Return to the pan and boil 1 minute. Remove from heat. Blend in butter and vanilla, and leave to cool. Slice bananas into base of cooled pastry shell. Cover with cream filling. Chill. Before serving, whip double cream and pipe or spoon round edge of pie.

When we think of cream pies banana and coconut are the first ones that cross our mind and, while we love them both, we don’t typically make them ourselves. Maybe it’s that our memories associated with a good cream pie are ones from state fairs we grew up going to or the diner by our old house that always had the best pies, but we realized we hadn’t really tried our hands at making a banana cream pie…which we obviously had to remedy immediately.

Banana Cream Pie
How to make a delicious banana cream pie from scratch! A vanilla custard-like pudding over sliced bananas in a pastry pie crust with real whipped cream and sliced almonds. Simply delicious!
What you'll need:
3/4 cup sugar
1/4 cup cornstarch
1/4 tsp salt
3 egg yolks
2-1/2 cups whole milk, divided
2 Tbsp butter
1-1/2 tsp vailla
3 ripe bananas
1 pastry pie crust (how I make pastry pie crust: )
fresh whipped cream (how I make whipped cream: )
sliced almonds (optional)
Blind bake the pie crust for 10 minutes in a 425* oven or until edges are slightly browned. Be sure to weight or prick the bottom to prevent it from rising. Let cool completely.
In a large bowl, combine sugar, cornstarch, salt, egg yolks and 1/2 cup milk. Whisk to fully incorporate. In a large saucepan, heat the remaining 2 cups milk just to a boil over medium heat while stirring constantly. When just to a boil, slowly pour the heated milk into the egg mixture while whisking vigorously. When all the milk is whisked in, transfer mixture back to the saucepan. Heat over medium heat until thick and bubbly. Remove from heat and whisk in butter and vanilla. Continue to whisk until butter is all melted and fully incorporated. Let cool on the stovetop 45 minutes to an hour.
When pudding is semi-cooled, slice bananas into the pastry crust. Arrange in a single layer on the bottom. Pour pudding over top and refrigerate 4-6 hours. Top with fresh whipped cream and sliced almonds. Serve and enjoy!

Banana Cream Pie is all about crisp pastry, creamy filling, loads of bananas, all covered with swirls of whipped cream. Very appealing, very comforting, and very tasty. It is what I would call an 'All American' type of pie, the one you always see in diners, family restaurants, and bakeries. Only now, with this recipe, you can starting making it at home.
