Chocolate Chunk Banana Bread is sweet, thick, fluffy, and, dare I say, moist. ????This recipe is my absolute favourite! Now there might be a lot of banana bread recipes out there, still, this one is exclusive and one of the best loaves I have ever made using super nutritious and healthy chickpea flour.
Ingredients:
1/2 cup butter, softened
6 tsp castor sugar
1+1/2 cup mashed bananas
3/4 cup milk
2 cups chickpea flour
1 tsp baking powder
1/2 tsp baking soda
1 teaspoon cinnamon powder
1/2 cup crushed walnuts
1/2 cup chocolate chunks
Method
1. Pre-heat the oven to 180C. Line a 9” X 4” loaf pan with parchment paper
2. In a bowl mix butter and sugar, until the mixture is fluffy.
3. Add in the mashed bananas and milk to it and mix it well.
4. Now sift in the chickpea flour, baking powder, baking soda and cinnamon powder.
5. Make sure you do not over mix.
6. Fold in the crushed walnuts and chocolate chunks. The batter will be thick.
7. Transfer the batter into the prepared loaf pan and bake at 180C for 40-50 minutes.

Today, I will be sharing with you how to make banana cookies. It's one of my children's favorite snacks. The recipe for these cookies is very simple, without using baking powder, baking soda, sugar, oil & flour, The COOKIES are very healthy and delicious!
1cup=250ml 1/4cup=60ml
Two ripe bananas
The weight of the peeled banana is about 170 grams
Put the bananas in a large bowl and mash them with a fork
Add in 1 cup of quick oats
1/4 cup dried cranberries, chopped
Add dried and chopped cranberries
Mix well
Prepare a large baking pan and line it with parchment paper or a silicone baking mat
Dig a tbsp and put it on the baking tray
This recipe can make 12 small biscuits
Use the back of a spoon to gently press to form a small round shape with a diameter of about 6 cm
Put it in the preheated oven and bake at 175 degrees Celsius or 350 degrees Fahrenheit for 15 minutes
The taste of this biscuit is slightly chewy on the outside and very soft on the inside
This is a very healthy and simple recipe

Ingredients:
1/3 cup of warm water (80-90 ml).
1 tbsp sugar (10g).
1 tbsp dry yeast or instant yeast (8g).
1/5 cup of warm milk (50 ml).
2/3 tsp salt (4g).
2 cups flour (250g).
Butter: 5 tbsp soft butter (50g) for dough and 15 tbsp soft butter for grease (150g).
Bake at 190° (375°F) for 20-25 minutes.
The result is light, airy, golden, flaky and buttery croissants! Bon appetit!
Banana Cream Pie
BANANA CREAM PIE RECIPE:
batch size - this is a larger commercial size recipe so this quantity recipe will make 4 - 8 banana cream pies or up to a dozen small 5 tarts. If you need a smaller quantity of pies, simply cut this recipe in half!
INGREDIENTS:
Pie Dough - (3-2-1 biscuit method)
18 ounces all-purpose flour
12 ounces unsalted butter (very cold)
1 t. sea salt
6 ounces ice water
Banana Pastry Cream -
1 Qt. half & half
1 vanilla bean
2.5 ounces corn starch
8 ounces granulated sugar
1/2 t. sea salt
3 large eggs
3 ounces unsalted butter
1 C. fresh banana puree
+
8 ounces melted good quality milk chocolate - for coating inside of pie shells
+
Fresh Chantilly Cream - for finishing (recipe follows)
1 pint heavy cream - (very cold)
1/4 C. powdered sugar (sifted)
1 t. vanilla extract:
PREPARATION:
pre-heat your oven to 375*f
1)MIX THE PIE DOUGH - Into a large mixing bowl, (or food processor bowl if preferred) sift to combine the all-purpose flour and sea salt. Then cut the unsalted butter into small chunks and work the butter into the flour and salt. Using the tips of your fingers rub the flour and butter together until all the flour has been coated with the butter, but you can still see pea-sized chunks of the butter throughout the dough - DO NOT OVERWORK THE DOUGH INTO A SMOOTH PASTE! Then slowly add in the ice water a couple tablespoons at a time just until the dough comes together into a shaggy mass. Cut the dough into two pieces and shape into disks. Wrap tightly and refrigerate at least 2 hours before you attempt to roll.
2)MAKE THE BANANA PASTRY CREAM - First sift the granulated sugar, corn starch and sea salt into a med. mixing bowl and set aside. Crack 3 large eggs into a separate bowl and set aside. Whisk up the eggs and then continue whisking the eggs into the dry ingredients. Then pour the half & half into a med. sauce pot with a heavy bottom. Scrape the vanilla bean caviar into the half & half, and then also add the pod. Bring the half & half and vanilla just to a simmer over med-low heat, whisking the entire time. As soon as you see bubbles start to form on the half & half, pour 1/3 of the hot liquid into the eggs/dry ingredient mixture, then whisk to combine. Scrape the tempered egg mixture back into the steaming sauce pot and whisk vigorously over med-low heat until it thickens substantially. (about 1 - 2 minutes) After it cooks, strain it through a fine sieve and leave to cool about 15 - 20 minutes. Add the 3 ounces of unsalted butter into the cooled pastry cream and then whisk until smooth. Whisk in the fresh banana puree and chill in the refrigerator with a tight wrap for at least 1 hour or more.
3)BAKE OFF THE PIE SHELLS @ a preheated 375*f oven- Roll out the chilled dough and blind bake as demonstrated in the video.
4)COOL THE SHELLS and then coat the inside of the shells with the melted chocolate. Place the coated pie shells into the freezer for 10 minutes until the chocolate looks set and shiny.
5)WHIP UP THE CHANTILLY CREAM in a stand mixer or using a whisk or hand-held mixer, sift in the powdered sugar and add the vanilla extract.
6)ASSEMBLE THE BANANA CREAM PIES! - Using a spoon, pile in the banana pastry cream halfway into the pie shells, add an even layer of freshly sliced RIPE bananas, then a second layer of banana pastry cream. Then simply finish with the Chantilly cream as desired. Dust pies with sifted powdered sugar. ENJOY!
