Beef Chow Mein Casserole
An easy and delicious way to make chow mein.
Ingredients:
1 lb. ground beef (Add Chicken for chicken Chow Mein)
1-2 cans cream of mushroom soup (Add cream of chicken for chicken chow mein)
1 can chow mein (beef or chicken). I could not find it in stores so I made the sauce and added 1 can bean sprouts, 1 can bamboo shoots, and 1 can water chestnuts) I made the sauce with 2 cans beef (or chicken) broth, 2 tsp. soy sauce, and thickened with 4 Tbsp corn starch mixed with 4 Tbsp. water.
1 cup instant rice (I added 1 1/2 cup)
1 cup water
Chow Mein noodles
Bake 375 30-40 minutes.

Here’s your recipe!
1 Cup Celery, Chopped (About 2 Stalks)
1 Small Onion, Chopped (About 1/4 - 1/2 Cup)
2 TBS Green Pepper, Chopped
1 TBS Butter
1 Can (3 Oz) Chow Mein Noodles
1 Can Cream of Mushroom Soup
1 Can (6 1/2 oz) Tuna, Drained
1/2 Cup Water
1/4 TSP Pepper
3/4 Cup Salted Cashews or Peanuts
Set oven to 350. Cook celery, onion and green pepper in butter until the onions are translucent. Reserve 1/3 cup noodles and add remaining noodles along with the rest of the ingredients to the pan, stir well. Pour in ungreased
1 1/2 quart casserole. Sprinkle remaining chow mein noodles over the top. Bake uncovered for 30 minutes until hot and bubbly.

Tuna Noodle Casserole - Food Wishes
I realize these things are quite subjective, but I’ve always considered this baked tuna and noodle dish to be the king of the comfort food casseroles. Except for maybe mac and cheese, which is sort of in a category by itself. This is the simplest version I know, and probably my favorite.

4 cups cooked egg noodles (8 ounces)
1 1/2 cups sour cream
1 1/2 cups Cottage Cheese
1/2 Cup finely Chopped Onion
1 clove garlic minced
1-2 tsp Worcestershire
Dash hot sauce
1/2 tsp salt
1 can (16 oz) salmon, drained, or 2 cans (6.5 oz each) tuna drained
1/2 cup grated Cheddar cheese

12 oz Package Wide Egg Noodles, boiled 9 minutes
1 12 Oz Can Tuna, Drained
1 Can Cream of Mushroom Soup
1 Can Cream of Celery Soup
1 1/2 Cups Milk
1 1/2 Cups Frozen Peas
2 Oz Jar Pimentos
7 Oz Can Sliced Mushrooms
1/2 TSP Salt
1/2 TSP Pepper
8 Oz Shredded Cheddar Cheese, Optional
2 Cups Potato Chips, Crushed
Mix everything except the potato chips together. Pour in a greased 9x13 Casserole dish. Sprinkle potato chips over top. Bake for 35 minutes in a 350 oven.
