How To make Baked Crab Stuffed Lobster
8 Maine lobsters, 1-1/4 to
1 1/2 Lb Each
1 LB Crab meat
1/2 Lb Butter, melted
2 C Dried bread crumbs, ground
-fine 2 Ts Worcestershire sauce
-pinch salt -Tomalley and Coral
Split a live lobster: Spread flat. Using a teaspoon, remove the tomalley (green stuff) and coral (pink stuff, roe) and reserve. Remove stomach (under the head) and devein. Remove tail meat and chop coarsely. Reserve. Leave claws intact. Prepare all lobsters as above. Mix bread crumbs, butter, salt, and Worcestershire sauce together. Add the tail meat, crab, tomalley, and coral, and toss to mix well. Fill the cavity of each lobster with the stuffing. Place in a foil lined baking pan, alternating head and tail to fit better. Bring the edge of foil up over the tail of each lobster. Press so as to secure end of tail to pan so the tails do not curl up as they bake.Bake at 325f for 50 minutes, more or less depending on size. Serve straight from the oven.

Crab Stuffed Lobster Tails
INGREDIENTS
- 8 Lobster Tails, 4 oz. each
- 4 Tablespoons Lemon Butter, melted (combine 4 Tbsp. melted butter with ½ Tsp. lemon zest)
- Salt and Pepper, to taste
- 4 Tablespoons Butter, salted
- 5 Tablespoons Onion, minced
- ½ Tsp. Garlic, minced
- 1 cup Butter Crackers, crushed
- 1 ½ cups Jonah Crabmeat, picked over for shells and cartilage
- ¼ Teaspoons Salt
- Ground Pepper, to taste
- ½ Teaspoons Lemon Zest
- 5 Tablespoons Dry Sherry
- 2 Tablespoons Olive Oil
DIRECTIONS
1. Preheat the oven to 425º Fahrenheit. Cut the lobster tails; start at the top of the
shell & cut down to edge of the fin. Remove the tail meat, then place on top of the shells.
2. Place lobster on baking sheet. Season with salt and pepper and then brush with melted lemon butter. Bake for approximately 5 minutes.
3. Melt butter in a small saucepan. Add onion and garlic and cook until onion is translucent (about 2 minutes). Gently fold in crushed crackers, salt, pepper, lemon zest, sherry, olive oil & crabmeat.
4. After 5 minutes, remove lobster tails from the oven. Brush again with melted lemon butter, pack pre-cooked Jonah crab stuffing tightly on top. Bake for 12 to 13 minutes, or until lobster meat reaches 145º Fahrenheit. Brush again with melted lemon butter, then serve immediately.

3-4 small / medium lobster tails
3 tbsp butter
1 tsp parsley fresh/dried
1 tsp cajun seasoning
1/2 tsp old bay seasoning
1/2 tsp cedar plank salmon seasoning
1/2 garlic powder
1/4 smoked paprika
1 tsp lemon juice
Crab Stuffing / Filling
8oz crabmeat (lump, claw, etc.)
1/4 cup Mayonaise
1 tbsp dijon mustard
1/2 tbsp lemon juice
1/2 tbsp Worcestershire Sauce
1 egg
1/2 tsp Old Bay Seasoning
1/2 tsp cajun Seasoning
1/2 tsp cedar plank salmon seasoning
Add bread crumbs as needed
4 Jumbo Shrimp (add and cut as desired)

Directions:
Preheat oven to 425F
Prebake lobster tail for 4 mins
Bake for 7-10 minutes or until the lobster tail is opaque or reaches an internal temp of 145F
