Potato and Egg Pie with Bacon and Creme Fraiche | 40 Best-Ever Recipes | Food & Wine
In February 1979, Paula Wolfert penned an article about great Alsatian chefs cooking their mothers’ food. Included was André Soltner, then the chef at the legendary Lutèce in Manhattan. Soltner opted to recreate his mother’s outstanding potato pie, which Wolfert said was “a simple thing, yet elegant.” It consisted of a flaky pâte brisée filled with thinly sliced potatoes, bacon, hard-cooked eggs, herbs, and crème fraîche. Wolfert noted how strongly Soltner felt while preparing the tart, with “pleasure and nostalgia plainly visible on his face.” The secret to the flaky pâte brisée is the single turn made with the dough in step 2. This is home cooking at its best, from one of America’s most revered French chefs. Soltner described the food of his native alsace as based on ”very good dry white wines and wonderful regional produce.” This pie makes a simple, elegant, and satisfying weekend lunch paired with a chilled bottle of alsace wine and a green salad. In a pinch, use a store-bought pie crust.

Step 1
Lay down bacon moving in a circular pattern until you cover the entire base of a skillet.
Step 2
Add a layer of sliced potatoes to the base. Cover in ground sausage, sliced onions and cheddar cheese.
Step 3
Repeat the layers.
Step 4
Add one more layer of potatoes and close the exposed bacon. Cover the top and put it in the oven at 350 degrees F. for 3 hours.
Step 5
Whisk together 2 egg yolks and 2 tablespoons of lemon juice.
Step 6
Add the bowl to a double boiler, and whisk slowly adding 1/3 cup of melted butter until it doubles in size.
Step 7
Bring a pot of water to boil. Add egg and boil for exactly 5 minutes. Take out the egg and put it into a cold water bath.
Step 8
Crack the bottom of the egg. Using a spoon, slide it in between the egg and the shell and turn it releasing the shell.
Step 9
Add egg to a slice of the pie, cover with hollandaise sauce.

Take all your favorite ingredients — cheese, eggs, and bacon — and turn them into a dish that'll have your guests oohing and aahing at the dinner table. For the eye-catching, woven crust of this delicious pie, all you have to do is work some magic with strips of tasty bacon. It may seem elaborate, but it's actually really simple. Take a look!
You'll Need:
- 4 eggs
- salt and pepper
- 15 fl oz milk
- 2 tbsp spring onion, in rings
- 5 slices of fried, cut up bacon
- 8 oz shredded cheddar
- 4 medium-sized cooked potatoes, diced
- 1 portion pie crust
- 20 slices of bacon
- 2 tbsp BBQ sauce
Here's How:
1. Break open the eggs and season them. Add milk and mix the ingredients. Add the spring onions, bacon cubes, cheddar and potatoes to the mix. Carefully fold the ingredients into the egg mix.
2. Place the pie crust into a quiche pan, press down on it at the edges and cut away any excess dough.
3. Pour the egg mix on top of the pie crust and spread it out with a spoon. Bake it at 320°F for 60 minutes.
4. After baking, weave bacon on top of the pie. Here's how to do it: first lay a horizontal slice on the upper edge of the pan; place a second slice vertically on top. Fold back the horizontal slice over the vertical one. Now place a second vertical slice right next to the first one and fold the horizontal slice back again. Weave the rest of the bacon going by this principle until the surface is fully covered. Cut away any excess bacon.
5. Spread barbecue sauce on the bacon and bake the pie at 320°F for 30 minutes.
