How To make Bacon Potato Pie
Ingredients

bacon, lean, thick-sliced

cheddar cheese, grated

Directions:
Cut the bacon slices into square pieces. Fry the pieces until well-cooked,
then drain on paper towels.
Peel the potatoes, then grate them. To prevent the grated potatoes from
discoloring while you prepare the other ingredients, you can put them into
a bowl of cold water. When you're ready to use them, be sure to drain well
and squeeze them dry.
Grate the cheese. Mince the onion. butter a 9x13 inch shallow baking
dish. Preheat the oven to 350 degrees F.
Beat the eggs in a large bowl. Add all the other ingredients and stir.
Pour the mixture into the baking dish and bake in the preheated oven for
about 45 minutes, or until the eggs are cooked. Serve hot, warm or at room
temperature.
NOTES:
* You can prepare part of this ahead. You can cook the bacon, grate the cheese and potatoes and mince the onion the night before. Store all these things separately in the refrigerator, covering the potatoes with water. Then in the morning just mix it all up and bake it.

• potato – 3 lb / 1,5 kg
• warm milk – ⅔ cup / 150 ml
• butter – 2 oz / 50 g
• sour cream – 7 oz / 200 g
• cheddar cheese – 9 oz / 250 g
• bacon – 3 oz / 100 g
• green onion – 2 tbsp
• salt – 1,5 tsp
• black pepper – ½ tsp
• vegetable oil – 1 tbsp
✅ You will need:
• baking tray
• stockpot
• foil
• oven
• potato masher
???? Preparation:
1. Peel the potatoes, put into a pot, pour with water and boil for about 25 minutes until readiness.
2. Drain and mash the potatoes.
3. Add the sour cream, milk, ⅔ cup / 50 g of the cheese, butter, salt and pepper to the taste, mix well.
4. Oil the baking tray and lay out the mashed potato, cover with a sheet of foil.
5. Preheat oven to 360°F / 180°C and bake the casserole for 20 minutes.
6. Take off the foil and sprinkle the casserole with the chopped bacon and rest of the cheese, bake for 15 minutes at 360°F / 180°C heat.
7. Take out the tray and sprinkle the dish with the chopped green onion.

Creamy Bacon Potato Spring Rolls | Crispy Potato Rolls Recipe
This recipe was inspired by Mcdonald’s Japan bacon potato pie. My childhood favorite snack :) It has a crispy crunchy pastry on the outside with smokey bacon and creamy flaky potato filling in the inside. It’s seriously good! I’m using egg roll wrappers to keep it light for my version, but you can also substitute with pastry sheet then bake or fry. Make in batch to store and fry some for snack whenever you want. Also a perfect finger food for parties! Enjoy~

Ingredients:
1/2 onion (diced)
2 potatoes (diced)
4 strips of bacon (thinly cut)
2 tbsp of butter
2 tbsp all purpose flour
300 ml chicken stock
150ml heavy cream
1 sprig of rosemary
Salt & pepper
1 bag of egg roll wrapper (25 count)
1 tbsp water (for wrapping)
Peanut/canola/corn oil
Direction:
Prepare chopped vegetables and bacon in advance. Soak the chopped potato in water for 30 minutes to prevent browning. Add thinly cut bacon into a pan and let the fat render on medium low heat. You can remove excess bacon fat to reduce calories or keep it for more flavor. Add butter, rosemary and diced onion then saute until fragrant (I added rosemary a little later in the video, but it’s more fragrant if you add it in this step). Next, toss in diced potato and continue to saute until it’s is brown around the edges (2-3 mins). Stir in all purpose flour to the mixture. Add chicken stock and bring it to a simmer. Add heavy cream then season to taste with salt and pepper. Transfer the mixture to a container and let it cool in the fridge.
Prepare the egg roll wrap by peeling and separating the sheets. We can start rolling our “potato pies” as soon as the filling mixture cools down and solidifies. I used the same technique to wrap Vietnamese egg rolls for this recipe (see video for tutorial).
In a pan, bring oil to 350°F and fry until golden brown. Turn the potato pies occasionally to ensure even cooking.
***The amount of salt needed depends on the amount of sodium in your chicken stock. Adjust according to your taste.
***You can also tell if the oil is ready by sticking the end of a wooden chopstick in the oil. If it bubbles up, oil is ready!
***Turn off the heat once you finish seasoning the filling mixture to avoid reducing the sauce mixture too much. The potato pie will be tastier with extra sauce versus being too dry.
