Bacon Pancake Dippers

These bacon pancake dippers are just cool any way you look at it. They're definitely fun for kids! Bain asked for them the next day too!
Pancake mix
Bacon
Syrup
Make the pancake batter according to directions.
Fry your bacon crispy.
Pour the batter into a squeeze bottle with a big enough hole for the batter to pour from, and cut the tip a little bigger so it's easier to pour.
Spray griddle with cooking spray and cook on medium heat.
Spread pancake batter in a long oval shape onto the griddle, a tiny bit bigger than your cooked bacon slices-it will expand, so be careful not to make them too large. Place a slice of cooked bacon in the center of each pancake, and gently press bacon into the batter.
Place more batter on top of each bacon slice, in a zig-zag pattern, so that you don't end up overcooking the bacon when it touches the griddle.
Cook until the batter bubbles up then flip until golden brown.
Serve hot with syrup and butter.

Pancakes with bacon and maple
Ingredients
- 260g flour
- 500ml buttermilk
- 2 eggs
- 2 tbsp caster sugar
- 1/2 tsp baking powder
- 1/2 tsp bicarb soda
- Pinch salt
- 50g melted butter plus 20g for cooking
- Bacon, maple and butter for serving
Method
1. In a large bowl add the flour, sugar, baking powder, bicarb soda and salt.
2. In a separate bowl, whisk together the buttermilk eggs and melted butter.
3. Add the wet to the dry ingredients and mix until just combined. Don’t over mix or they won’t be fluffy, small lumps are ok.
4. Heat a fry pan over medium heat and add some melted butter.
5. Pour pancake batter onto the pan one at a time, dont over crowd the pan.
6. Cook until bubbles form on the surface, then flip and cook until golden brown.
7. Serve with bacon, maple syrup, and additional butter.
8. Enjoy!

Recipe ingredients:
1 cup flour
1 cup of your favourite whole-wheat flour
1 cup rolled oats
2 Tbsp baking powder
1 tsp freshly ground nutmeg
½ tsp salt
2 cup milk
¼ cup oil
2 eggs
1 tsp vanilla
Recipe directions:
1. Whisk together the flours, oats, baking powder, nutmeg and salt. In a separate bowl whisk together the wet ingredients. Using a wooden spoon, stir the dry mix into the wet ingredients just to combine.
2. Preheat your griddle or a large skillet over medium high heat.
3. Spoon the batter onto the preheated surface. Small pancakes cook faster and are easier to flip but if you’re a deft hand, feel free to make them bigger. Watch for bubbles to break the surface, then flip and finish. Serve and share!
4. Variations: Add a little fun by frying a batch of bacon on the griddle first. Once the bacon has finished cooking, fold the strips in half and pour spoonfuls of batter over. Cook until golden brown, then flip and cook the second side.
