How To make Bacon & Egg Carbonara
Ingredients

bacon, slices, cut into 1 inch squares
8
oz
pasta, capellini or vermicelli or angel hair
2
cup
sour cream
1/4
cup
chives, fresh, thinly chopped or sliced green onions, including tops
4
each
egg, yolks
1
cup
parmesan cheese, grated
Directions:
In a wide fry pan; cook bacon over medium heat until crisp. Spoon off and discard all but 3 tb of the drippings; keep pan with bacon warm over lowest heat. In a 5-6 quart pan; cook pasta in three quarts boiling water just until tender to bite, according to package directions. After adding the pasta to the boiling water, spoon 1/2 c of the sour cream into each of 4 wide, shallow bowls; place bowls in a 200 degree oven while completing cooking.
Drain pasta well; add pasta and chives to bacon in the pan. Mix lightly, using two forks. Spoon an equal portion of pasta mixture into each warm bowl. Make a nest in the center of each; slip in an egg yolk. Mix each portion individually and sprinkle with cheese.

Carbonara
Ingredients
- 400g Guanciale, diced small
- 300g pecorino cheese, grated
- 1 packet spaghetti
- 1 whole egg
- 3 egg yolks
- Salt for the pasta water
Method
1. Place a large pot of water on to boil with 2 pinches of salt in it.
2. In a large frypan, add the guanciale and place on a med-high heat
3. Add the pasta to the boiling water and cook until al dente
4. Once the guanciale is golden, remove from the heat and drain the fat from it, keeping both the guanciale and fat
5. In a mixing bowl, add all the eggs and the cheese, then add about 1/2 cup of the hot pasta water and mix
6. Once the pasta is cooked, add it to the pan the guanciale was in and then add 3/4 of the cooked guanciale and the cheese and egg mixture
7. Mix well (note you do not want the heat on under this), feel free to add some more of the hot pasta water if you feel it needs
8. Serve and sprinkle some of the leftover crispy guanciale on the top and some fresh black pepper.

Pasta carbonara recipes get pretty butchered here in the States!! The combination of pasta, eggs, cheese and fat from the pork product work together to create a very creamy sauce without having to use any actual cream.
INGREDIENTS:
1 pound dry Italian brand spaghetti pasta
3 whole eggs and 2 egg yolks
3 oz pecorino romano cheese finely grated
3 oz parmigiano reggiano cheese finely grated
1/2 pound thick cut bacon and drain off all but 2 tbsp once cooked
1/2 cup pasta water, 1/4 cup with the eggs and 1/4 cup to finish
fresh ground black pepper to taste

My delicious carbonara recipe is made with no cream and serves 2 people. It includes traditional ingredients such as egg and bacon to make it super tasty. It’s the perfect Italian style recipe and it’s really quick and easy to prepare.
There’s a lot of debate as to what a traditional Italian style carbonara recipe includes. Most importantly, this recipe contains no cream and has bacon and egg yolk without the whites. This recipes serves 2 people, simply multiply up the ingredients for more servings.

Creamy Egg Carbonara Recipe Ingredients:
250g pasta
2pcs eggs
1/2 cup grated parmesan cheese
sliced bacon
black pepper
Creamy Egg Carbonara Recipe Cooking Procedure:
Whisk 2pcs eggs until smooth.
Then add 1/2 cup grated parmesan cheese and mix well. Set aside.
Boil about 2 liters water.
Then add 1/2-1tsp salt.
Cook the pasta for 8-10mins.
After 8-10mins, turn off the heat.
Cook sliced bacon on another pan.
When the bacon turns brown, turn down the to low.
Then, add the cooked pasta and about 1/2 cup of pasta water.
Gradually add the egg and cheese mixture while mixing to avoid lumps.
Add about 1/2tsp black pepper (you can add more according to your preference).
Then turn back the heat to medium and let it simmer for 1-2mins.
Transfer to a serving plate and serve while still hot.

Chef RoRo's Special Creamy Carbonara with Eggs and Bacon
Quick and easy to cook recipe for your friends and family.
Prep Time - 5 minutes
Cook Time - 25 minutes
Total Time - 30 minutes
Servings - 6
✅Ingredients
- 1 kg spaghetti pasta
- 250 g bacon strips diced
- 4 piece eggs
- 1 cup all whole milk
- 1/2 cup grated Parmesan cheese
- 1/2 cup grated Cheddar cheese
- 3 piece bay leaves
- 8 cloves garlic minced
- 1/8 teaspoon paprika
- 1/8 teaspoon chili flakes
- 1 teaspoon salt
- 2 quarts water
✅Instructions
- Cook the spaghetti by pouring water in a cooking pot. Let boil. Add salt and put the spaghetti into the pot. Cook for 8-10 minutes or until al dente. Remove the spaghetti Set aside. Save 1/2 cup of pasta water.
- Beat 4 eggs on a separate bowl, add pepper and 1 cup milk, stir and set aside.
- Cook the bacon until crispy and golden brown. Save the bacon grease.
- Add garlic,bay leaves, paprika and chili flakes. Stir until more grease comes out from the bacon.
- Stir in the grated cheddar cheese and add the pasta water, once melted, set to medium heat and add the egg and milk mixture.
- Add the cooked spaghetti. Toss until spaghetti gets totally coated with sauce.
- Transfer to a serving plate.
