The BEST Smoked Cowboy Baked Beans Recipe - BBQ Sides - Backyard Texas Barbecue
Growing up we had Baked Beans at almost every BBQ. It wasn't until I went to Texas where I had some Cowboy Baked Beans with black beans.
I decided to add onto my beans and smoke them. You can easily use your pellet grill as an oven. Just turn the temperature up and you still still get some of that amazing smoked flavor!

Ingredients:
6 slices, thick cut bacon
1 (14 oz) Chili Beans
1 (14 oz) can Pork ‘n Beans
1 (14 oz) black beans
1 (7 oz.) can chipotle peppers in adobo sauce, chopped
1 medium yellow onion, chopped
3/4 cup light brown sugar
1/2 cup BBQ sauce
1. Cut the bacon into 1-inch pieces. Add to a skillet and cook over medium-high heat until almost cooked all the way through. Add onions and cook for 5 minutes.
2. Drain the juices from the beans. Add to a 9x13 pan (or aluminum pan)
3. Stir in the chipotle peppers, to taste. Stir in the onion, brown sugar and BBQ sauce. Cover with foil.
4. Cook at 350 degrees F. for about 30 – 40 minutes.

Slow Cooker Spicy Pinto Beans {The BEST Mexican side dish}

I often make these beans instead of refried beans along with enchiladas or taco night. These beans have quite the spicy kick to them!
RECIPE:
INGREDIENTS:
1 lb. dried pinto beans no need to presoak
1 cup diced yellow onion
1-2 jalapenos sliced
2 tsp. chili powder
½ tsp. onion powder
½ tsp. garlic powder
¼ tsp. pepper
32 oz. container chicken broth
2 cups water
Add at the end:
¼ tsp. salt or more to taste.
SLOW COOKER SIZE:
5-quart or larger
INSTRUCTIONS:
Rinse and drain the beans, discard any dirt clumps or rocks. Add to the slow cooker.
Add the onion, jalapenos, chili powder, onion powder, garlic powder, pepper, chicken broth and water to the slow cooker with the beans. Wait to add the salt.
Cover and cook on HIGH 7-8 hours. Do not open the lid while they cook, or they will not get tender.
When the cooking time is done mash about 1/4 of the beans with a potato masher right in the slow cooker. Or you can put a scoop in a bowl and mash with a fork and add back to the slow cooker. This will make the beans creamy, which the slow cooker can't do since the simmer is so low. Add salt to taste, I usually use 1/4 tsp.
Serve as a side dish or as a main with tortillas or cornbread. Enjoy!

Thank y’all for stopping by! Don’t you hate it when someone serves you beans right our of the can?! Now I’m not against canned at all, but you got to give them a little more love to make it good. We’re showing you our recipe for cowboy baked beans using chili beans and pork and beans for the base along with some chipotle peppers to spice it up. Stick around for this classic baked bean recipe.

Cowboy Baked Beans
Makes about 10- 12 servings.
6 slices, thick cut bacon
1 (26 oz) can Ranch Style or Chili Beans
1 (28 oz) can Pork ‘n Beans
1 (7 oz.) can chipotle peppers in adobo sauce, chopped
1 medium yellow onion, chopped
1 – 1 ½ tablespoons yellow mustard
1 ½ - 2 cups light brown sugar
1/2-1 cup BBQ sauce
1. Cut the bacon into 1-inch pieces. Add to a skillet and cook over medium-high heat until about ¾ done. Set aside.
2. Using a colander, drain the juices from the beans. Add to a 12-inch Dutch oven.
3. Stir in the chipotle peppers, to taste. Stir in the onion, mustard and brown sugar and BBQ. Adjust taste, if needed.
4. Cook over coals until the mixture reaches a boil, let simmer a few additional minutes and the mixture thickens just slightly. Serve warm with a slotted spoon.
Note: If cooking in the house use an 11x13-inch casserole dish. Cook at 350 degrees F. for about 30 – 40 minutes.
