Chili, Bachelor Style
Chili. A standard. Great for those cold winter or brisk fall days. This one is quick and easy. Anybody can make it. Just follow the recipe. Lets begin.
1 pound ground beef
1 16 oz. can pinto beans
1 32 oz. can crushed tomatoes
2 Green Bell peppers [diced]
1 large onion [diced]
6 ozs. V8 juice
2 tbl. spoons Tabasco Sauce
2 tbl. spoons chili powder
2 tbl. spoons salt
1 tbl. spoon black pepper
1 small can tomato paste
In a large pan brown and drain the ground beef. Put the beef aside in a strainer with paper towels to absorb grease. Add a tablespoon of oil to the pan and saute the diced peppers and onions till soft. Add the beef,beans, crushed tomatoes, tomato paste, V8, and all the dry spices. Bring to a boil then lower heat to a simmer. Cover for 30 minutes and let simmer. Add Tabasco and let simmer an additional 5 minutes. Serve in chili bowls with saltines. Top with grated Monterey Jack cheese if desired.
This whole recipe takes only 45 minutes from start to finish. It is a good way to impress the ladies on a home dinner or lunch date. It is good to use about an 80% lean beef. You can use ground sirloin, but the chili seems to take on a different flavor because not as much fat is imparted throughout the chili. This chili was entered in a hospital cafeteria food contest, and took first place. The patients loved it. Good luck and Good cooking.

CHILLI PANEER
Preparation Time: 15 minutes
Cooking Time: 20 minutes
Serves: 2
Ingredients :-
For Batter
2 tbsp refined flour
1 tbsp corn starch
A pinch of Salt
¼ cup water
1 tbsp corn starch (for Coating paneer)
250 gms Paneer, cut in cubes
Oil to deep fry
For Chilli Paneer Sauce
1 tbsp oil
1 tbsp ginger, finely chopped
1 tbsp garlic, finely chopped
2 dry red chilli, roughly chopped
1 tbsp celery, chopped
1 medium onion, cut in quarters
1 small capsicum, cut in cubes
1 tbsp soy sauce
2 fresh red & green chilli, sliced
1 tbsp green chilli sauce
1 tbsp Sweet & Sour sauce
1 tsp sugar
1 tbsp corn flour slurry (corn flour + water mixed)
Handful of spring onion, sliced (white with Green part)
Garnish:-
Spring onions, chopped
Toasted sesame seeds
Process:-
• For Coating paneer add refined flour, corn flour, salt and water to a bowl, mix well and set aside till in use.
• Add the corn starch to the paneer cubes and coat well, pour over the prepared batter and mix well coating all the paneer cubes evenly.
• Deep fry the coated paneer cubes till light golden, drain on absorbent paper. Set aside till in use.
• Heat oil in a pan, add ginger, garlic, whole red chilli and celery. Mix well and sauté for a few minutes.
• Add onions and capsicum, sauté till onions are fragrant.
• Add soy sauce and toss well to coat. Add fresh red and green chillies, sauté for a few seconds.
• Add green chilli sauce, sweet & sour sauce, mix and toss well.
• Add little water, sugar and cook till it melts.
• Add some more water and the corn flour slurry, cook till the sauce thickens.
• Add the fried paneer cubes and spring onions, toss well.
• Garnish with spring onions and toasted sesame seeds.
• Serve immediately.
