Portuguese Easy Fish and Eggs recipe: Bacalhau A Brás! ASMR Cooking
Welcome to Iky Cooking, where we explore the flavors of the world one delicious recipe at a time! In today's mouthwatering episode, we're diving into the heart of Portugal to bring you the irresistible taste of Bacalhau A Brás, a delightful twist on the classic fish and chips and a very easy fish and eggs recipe. Get ready for a sensory feast as we create ASMR magic in the kitchen.
Ingredients:
2 potatoes, thinly sliced
Olive oil for frying
Cod fillets (previously desalted)
3 eggs, beaten
1 onion, finely chopped
2 garlic cloves, minced
Fresh parsley, finely chopped
Black olives, pitted and sliced
Salt and black pepper, to taste
Nutmeg, a pinch
Instructions:
1.- Start by frying the thinly sliced potatoes in hot olive oil until they turn golden brown and crispy. Set them aside to drain excess oil on paper towels.
2.- In a separate pot, boil the desalted cod fillets for about 2 minutes until they become tender. Drain, then flake the cod into small pieces, removing any bones.
3.- In a large pan, heat some olive oil and add the finely chopped onion and minced garlic. Sauté them until they become soft and translucent.
4.- Add the flaked cod to the pan along with a pinch of black pepper and nutmeg. Continue to cook and stir for a couple of minutes until the cod is well incorporated with the onions and garlic.
5.- Gently add the fried potato slices to the pan and mix everything together. Allow the flavors to meld for a few minutes.
6.- Pour the beaten eggs into the pan, followed by the chopped fresh parsley. Stir continuously, ensuring the eggs coat all the ingredients evenly. The residual heat will gently cook the eggs without curdling.
7.- Once the eggs are partially set but still slightly runny, remove the pan from the heat. The residual heat will continue to cook the eggs to perfection.
8.- Transfer the Bacalhau A Brás mixture to a round mold, creating a beautifully shaped dish.
9.- Sprinkle the sliced black olives and additional chopped parsley on top for a burst of color and flavor.
10.- Serve this delightful Portuguese dish immediately and savor the irresistible combination of flavors and textures!

???? 400 g de bacalhau desfiado e dessalgado
???? 200 g de batata palha
???? 1 cebola picada
???? 2 dentes de alho picados
???? 1-2 folhas de louro
???? 2-3 colheres de sopa de azeite
???? 4 ovos batidos e temperados com sal e pimenta do reino
???? Salsinha, sal e pimenta a gosto
???? Azeitonas a gosto

BACALHAU À BRÀS
Ingredients
400 grams dried surmai
4 eggs
Crushed black peppercorns to taste
Salt to taste
3 tablespoons oil
2 medium potatoes, peeled and cut into thick strips
1 large onion, sliced and layers separated
1 tablespoon chopped garlic
½ tablespoon chopped fresh parsley
Black olives for garnishing
Fresh parsley sprig for garnishing
Method
1. Slit the fish horizontally without cutting through and place in a deep tray. Add sufficient water and set aside for 25-30 minutes.
2. Beat eggs with crushed peppercorns and salt.
3. Remove the flesh from the fish, discard bones and cut the flesh into pieces.
4. Heat oil in a non-stick pan. Add potato strips and salt, mix and sauté till lightly browned. Remove from pan and set aside.
5. Add onion and garlic in the same pan, mix and sauté till onion turns golden brown.
6. Add fish flesh pieces and mix. Add potato strips and mix. Add beaten eggs, mix well and cook till fully done. Add chopped parsley and mix well.
7. Garnish with olives and parsley sprig and serve hot.
