How To make Bacalhau'A Bras
1 1/2 lb Bacalhau (dry weight)
1 1/2 lb Potatoes
1 1/2 c Olive oil
2 Garlic cloves, peeled
8 Eggs
Salt & pepper Fresh parsley, chopped Olive oil Tomatoes Lettuce Black olives
Soak the cod fish at least overnight, longer if possible. Carefully remove bones and pieces of skin. Peel and cut the potatoes in long, thick match sticks. Heat the olive oil in a large skillet, add the garlic cloves and fry till golden. Discard the garlic. Stir-fry the flaked cod. Add the potato sticks, previously lightly fried in another skillet. Season with salt and pepper. Let cook for a while over a low fire and meanwhile beat the eggs in a bowl. Scramble over the cod and potatoes and let cook till everything is set together, Sprinkle with the chopped parsley, decorate with black olives, and serve surrounded by lettuce leaves and tomato slices. Variation: Bacalhau 'a Lisbonense': In the same skillet you first fried the potato sticks lightly fry 2 medium onions finely sliced. Add to the main skillet when you add the potatoes. ----

BACALHAU À BRÁS Receita portuguesa fácil e deliciosa
Bacalhau à Bras é um típico prato português de bacalhau. Sendo um dos mais populares pratos feitos com este peixe, consiste em bacalhau desfiado, batatas fritas palha, cebola, ovos mexidos, azeitonas e salsa picada. É amplamente consumida em Portugal de sabor excelente e muito fácil preparação, rápido e delicioso, outro prato incrível de bacalhau a não perder.
Ingredientes (para 4 pessoas):
2 postas de bacalhau ( 500gr) cocido
200 g de batata frita palha
1 cebola cortada em meias luas finas
4 dentes de alho esmagados
100ml de azeite
6 ovos
Sal q.b.
Pimenta q.b.
Salsa picada q.b.
Azeitonas pretas
Preparação:
Aprox. 30 minutos
Retire a pele e as espinhas ao bacalhau e desfie-o.
Leve ao lume um tacho com o azeite, a cebola e os dentes de alho esmagados e deixe cozinhar até ficar macia. Adicione o bacalhau, misture e deixe cozinhar durante cinco minutos. Acrescente a batata frita palha e misture.
Bata os ovos com uma pitada de sal e pimenta, junte-os à mistura do bacalhau e mexa até os ovos ficarem cozidos. Retire e sirva polvilhado com salsa picada e azeitonas pretas.

Classic Portuguese salt cod casserole
2 Pounds Salt Cod
2 Pounds Potato
2 Large onions
6 Hard boiled Eggs
2 Cups of Milk
2 tsp of chopped garlic
1 can of black olives pitted
1/4 cup chopped parsley
1/4 cup Extra Virgin Olive oil
Soak the salt cod for 24 hours change the water six times over the course of 24 hours.
Shred the card into small pieces
Bring the milk to a simmer add in the Cod and Potatoes and Simmer on low - until the potatoes are tender
Sauté the sliced onions until golden in olive oil. When the onions reach a golden color add in the chopped garlic and cook for additional five minutes.
Drain the excess milk from the cod and potatoes. At this point taste the potatoes to see if there is enough salt in the dish if not add salt at this time.
Mix in the cooked onions.
Slice the eggs in circles, reserve the nice pieces for garnish on top of the casserole and chop up all the end pieces of eggs to mix into the casserole
Put the potatoes, cod, chopped eggs, half of the olives, parsley and onions in a casserole dish. Drizzle with a quarter cup of extra-virgin olive oil, and bake at 350° for 30 minutes
Garnish the top of the casserole with the nice slices of hard-boiled egg and the rest of the black olives
