How To make Babka with Various Fillings
1 cup milk
2 tablespoons milk
additional
2 large eggs
1/2 teaspoon vanilla extract
3 1/2 cups flour :
(all purpose)
1/2 teaspoon salt
2 tablespoons sugar
2 tablespoons unsalted butter or margarine
2 1/2 teaspoons yeast
(PICK A FILLING:) CINNAMON SUGAR BABKA FILLING: 2 tablespoons unsalted butter :
softened
1/4 cup sugar
1 teaspoon cinnamon
CHOCOLATE BABKA FILLING: 1/4 cup cocoa
1/2 cup sugar
1/4 cup melted unsalted butter
1/3 cup coarsely chopped pecans
CHEESE BABKA FILLING: 8 ounces farmer's cheese
2 tablespoons sugar
1 tablespoon flour
1 large egg yolk
2 teaspoons grated orange zest
1/4 cup dark raisins
CRUMB TOPPING: 1 tablespoon unsalted butter softened
2 tablespoons sugar
2 tablespoons flour
2 pinches cinnamon
EGG WASH: 1 large egg white :
beaten with:
1 teaspoon water
All ingredients must be at room temperature.
Add ingredients except for filling, crumb topping, and egg wash in the order specified in your machine's manual.
Use DOUGH setting.
At the end of the program, press CLEAR/ STOP. To punch dough down, press START and let knead for 60 seconds. Press CLEAR/ STOP again. Remove dough and let rest 5 minutes before hand-shaping.
HAND- SHAPING TECHNIQUE: While the dough is rising, prepare your filling of choice by blending ingredients together with a fork til crumbly. To make crumb topping, blend all ingredients with a fork til crumbly. Chill both til ready to use.
Lightly grease a 4 -1/2 x 8 -1/2- inch loaf pan. On a lightly floured surface, roll the dough into a 10 x 20-inch rectangle. Cover with filling up to 1 -inch from edges. Roll up lengthwise, jelly roll fashion. Pinch seam and ends together securely together so that they do not open during baking.
Carefully place babka in prepared pan. Fold ends under and shape into an " S " so that it fits into the pan. Cover with a clean kitchen cloth and let rise til doubled in size.
OVEN: 350
Form a crease in the top of the risen babka with the side of your hand. Brush with egg wash and cover with crumb topping.
Bake approximately 30 to 35 minutes, or til golden brown. (If babka begins to brown too quickly, cover top with foil..
Remove from pan and cool on a wire rack.
VARIATIONS:
CHOCOLATE FILLING: Blend together cocoa and sugar. Brush surface of babka with melted butter. Sprinkle with cocoa-sugar mixture and pecans.
CHEESE FILLING: Blend all ingredients together except the raisins. After spreading the cheese filling on the babka, sprinkle with raisins.

*This recipe can be made with regular dairy products as well
Place in a bowl half a cup of lukewarm water
with 2 tsp of sugar and
1 tablespoon of yeast
mix it put it aside covered for 5 to 10 minutes until it bubbles
In a food processor, by hand or in the bowl of a stand mixer fitted with dough hooks
mix together
4 1/2 cups of flour
1/3 of a cup of sugar
2 teaspoon of vanilla extract
and 1 teaspoon of cinnamon
mix everything together
in a separate bowl add 3/4 cup of melted margarine
With half a cup of almond milk (or regular milk depending on what you're using)
mix everything together then set it aside
add your proofed yeast to to the flour
Mix on the lowest speed
add the butter and milk
Mix until fully combined
finally the eggs one at a time making sure to incorporate them fully before adding the other egg
Continue mixing the dough until it begins to come together
after about 3 to 5 minutes of mixing raise the speed to medium-high and mix for another 5 to 10 minutes until the dough is shiny and elastic
For the cinnamon filling for your babka
Add 3 cups of brown sugar
1/3 cup of flour
3 tbsp cinnamon
1 tsp of kosher salt
6tbsp of melted vegan butter or margarine
3 egg whites
Mix everything until fully combined it should form a thick and shiny filling
For a thinner consistency add 1tbsp of almond milk
Mix everything until fully combined and set it aside at room temperature
preheatYour oven at 350°F
When your dough is ready, you should have about 1.2 kg of dough
cut your dough in three equal parts ( about 360g / piece of dough)
Flour your working surface and your rolling pin
Using a rolling pin, roll your dough in a rectangle shape until it rectangle about 9x17 inches and 1/6” inch in thickness
bake for 35 minutes or until the internal temperature is 185F
while the Babka is baking combine
one cup of sugar
2/3 of a cup of water
and 1 teaspoon of vanilla extract
in a small sauce pan bring to a boil on medium high heat once it comes to a boil remove from the heat and swirl it around to ensure that all the sugar is dissolved
If you want you can add fruits in the syrup and let them cook thoroughly to add flavour to the syrup: I like to use Apple to make my own apple syrup recipe from scratch specially as a Rosh Hashanah dessert!
about 20 to 25 minutes into baking spoon about half the syrup onto baking Babka
when your babka is fully baked and the internal temperature has reached 185F, take the babka out of the oven and immediately drizzle or brush the remaining syrup on top of all three babkas it may seem like a lot of syrup but this will ensure a moist and gooey babka
Cover your cinnamon babka with a clean tea towel for 15 minutes to have the most soft and moist babka

Traditionally babka is filled with chocolate or cinnamon filling but chocolate babka is one of my favourites. If you love chocolate and cake like textured bread then you came to the right place. Today i am gonna show you how easily you can make this dreamy chocolate babka at home, which is a little crunchy on the outside and is soft, chocolaty and buttery on the inside and this is something you won’t want to share with anyone :)

ingredients you will need -
All purpose flour - 750 gms
Eggs - 3 + 2 egg yolks
Active dry Yeast or (instant yeast)- 14 gms
Sugar - 1 tsp
Salt - 1/2 tsp
Granulated sugar - 100 gms
Milk - 200 ml
Vanilla extract - 1 tsp
Softened unsalted butter - 160 gms
Chocolate Spread -
70% cacao dark chocolate chips - 250 gms
Unsalted Butter - 120 gms

This bread has it’s routes in Poland and was a popular treat within the Jewish community. The two main fillings are chocolate and cinnamon. But I am guessing that today the amount of fillings are only as endless as our imagination.
You can bake this in high sided baking tins or platted and laid on a baking tray. You can complete this bake in one day by proofing the dough at room temperature. However the taste really develops over time so if you can proof the dough in the fridge overnight it works really well.
Oven temp: 180c on the bake function - bake for 30 mins
Recipe:
500g All purpose white flour (13.2% protein)
10g Dried yeast
220g Full fat milk
100g White sugar
100g Unsalted butter
2 Eggs
Chocolate mix:
250g Roughly chopped 70% Cocoa chocolate
180g Unsalted butter
100g White caster sugar
2 Tbsp of Cocoa powder
Sugar syrup glaze
160g sugar
120 grams water

How to Make Chocolate Babka Muffins | Perfect Braided Mini Babka Bun Recipe
This fun sized babka is awesome and it is super easy to make. The four-strand braid will make you look like a pro even though it is the easiest thing in the world.
Soft and fluffy dough layered with a rich cocoa filling. You can customize it to your taste by choosing a different filling. The only thing to look out for is consistency as a runny filling will turn this into a nightmare.
If you have made babka, then you will be familiar with the process. Of course, there could be many variations to the dough. I chose a relatively low hydration, not too much fat and sugar and no preferments or sponge to make things as easy as possible.
You just need a few basic ingredients, which a lot of you will most likely have at home and you will need a few hours of waiting time. There is not much to say about this one.
The soft brown sugar used in each part of this bread gives it a nice richness and the glaze makes them shine with a dark brown colour.

Babka Bread
205g whole eggs (that's about 4 large eggs!)
60g sugar
150g butter, very soft
145g whole milk
5g active dry yeast
500g bread flour
10g salt
butter or parchment paper, for lining the pans
Filling
200g pecans
120ml double cream (or heavy cream)
107ml maple syrup
50g brown sugar
170g salted butter
10ml vanilla extract
a 2-3 tbsp. maple syrup, drizzled on at the end
This recipe makes 2 babka loaves!
