How To make Ayam Panggang Mesanten (Grilled Chicken With
2 lb Chicken
1 ts Salt
1 c Oil
1 ts Dried shrimp paste
4 Shallots; chopped
3 Garlic cloves, crushed
3 Chilies, red, fresh
2 tb Oil
2 1/3 c Coconut milk
2 Bay leaves
1 Lemon grass stalk
1 tb Juice, lime
1 Chilies, red, fresh
Dried shrimp paste is also called terasi. Seed and shred the chilies. Crush lemon grass with side of cleaver. Cut chicken in half. Wash and pat dry. Rub with salt and oil. Grill over hot coals about 10-15 minutes each side, until done. Slice chicken into bite-sized pieces. Wrap shrimp paste in foil and toast each side over moderate heat about 2 minutes. Pound shallots, garlic, chilies, and toasted shrimp paste into a paste. Heat oil in frying pan. Add paste and fry on moderate heat, stirring, for about 4-5 minutes, or until dry, do not burn. Add coconut milk gradually, stirring after each addition. Add bay leaves and lemon grass. Bring to a boil. Simmer 5 minutes to allow flavors to blend. Add lime juice. Stir. Add cooked chicken and reheat in sauce. Garnish with the shredded chilie. Serve with rice and Sambal Ulek. Here is something that I remembered on my last trip to Padang and the Mentawai Islands. Simple Ayam Betutu
A simpler way to make Ayam Betutu is by stewing the chicken instead of roasting it????As always it is best served with rice. If you can’t find Balinese Long pepper (tabya bun) you can always use 1/4 tsp of black peppercorns instead. Happy Cooking ????
Ingredients:
1 whole chicken around 1 kg
Shallots 17 pcs (80 gr)
Garlics 10 pcs (65 gr)
Big red chilies 3 pcs seeds removed (70 gr)
Bali hot pepper 5 pcs
Turmeric 4 cm (10 gr)
Galangal 3 cm (12 gr)
Lesser galangal (kencur) 2 cm (4 gr)
Ginger 1 cm (4 gr)
Extra 5 pcs bali hot pepper (optional)
Coconut oil 1 tbsp
Vegetable oil 1 tbsp
Palm sugar 1/2 tbsp
Salt 1 tsp
Shrimp paste 1/2 tsp
Lemongrass 2 pcs
Salam leaves 5 pcs
Chicken stock 1 liter
Spice needs to be ground first with a mortar and pestle:
White peppercorns 1/2 tsp
Black peppercorns 1/2 tsp
Balinese long pepper (tanya bun) 1 pcs
Nutmeg 1/4 tsp
Candlenut 3 pcs
Corriander seed 2 tsp

Opor Ayam originally comes from Java, one of the Islands of Indonesia, it is aromatic, tasty and yummy, best to serve with rice. I hope you enjoy the video and happy cooking ????
Ingredients:
550 gr (6 pcs) chicken thigh fillets
500 ml chicken stock
1000 ml fresh coconut milk thin consistency (I made from 1 whole coconut mix with 800 ml of freshwater)
2 tbsp vegetable oil
1/2 tsp salt
1 1/2 tsp sugar
2 pcs lemongrass stalk
3 pcs Salam leaves (you also can use kaffir lime leaves as a substitute for adding fragrance to the dish )
2 cm (20 gr) galangal
For blend paste:
7 pcs (60 gr) shallots
4 pcs (20 gr) garlic
10 pcs candlenuts
2 tsp coriander seeds
1 tsp cumin seed
1 tsp white peppercorn
1 cm (5 gr) ginger
1/2 cup (120 ml) freshwater
For garnish :
Big red chilli
Kaffir lime leaves
Fried shallots
Bali hot pepper (optional)
