How to Pre-Heat an Authentic Cast Iron Pizzelle Iron and mixing of dough in a KitchenAid mixer
This is how I mix and start a batch of Pizzelle using an Authentic Cast Iron Pizzelle Iron. I Pre-Heat the pizzelle iron and mix the dough in KitchenAid mixer in a manner that approximates the Italian Well Method without the muss and fuss.. Notice I Pre-heat the iron while mixing and portioning the dough on my 93 year old pizzelle iron to save time during the busy holiday season...... How To Make Pizzelles! Three Different Flavors! Happy New Year!
Traditional Pizzelle Recipe:
1 stick of butter(113 gr) melted
3 eggs
3/4 of a cup of sugar
1 3/4 of a cup of flour
2 teaspoons of baking powder
For Anise pizzelles: Add 1 teaspoon of Pure anise extract.
For Lemon pizzelles: Add 1 teaspoon of dried lemon peel(or zest of 1 lemon) and 1 teaspoon of Pure lemon extract.
For Chocolate pizzelles: Add 3 teaspoons of Cocoa powder and 1 teaspoon of Pure vanilla extract ( you can substitute for cherry extract, peppermint or coffee extracts)
Method:
In a mixing bowl, add 3 eggs and 3/4 of a cup of sugar. Mix with electric mixer until mixture becomes pale yellow ( about 2-3 minutes)
Add melted butter ( you have to cool it down a little bit to room temperature before adding)
Combine dry ingredient: 1 3/4 of a cup of flour + 2 teaspoons of baking powder.
Add dry ingredients to egg and butter mixture, mix JUST TO COMBINE! Do not over mix.
Get your pizzelle iron ready and hot!
Some pizzele irons have light indicators to let you know when it has been preheated.
Spray surface with cooking spray!( you only need to do it ones before making first ones.
Pizzelles usually cook for about a minute or so, after 30 sec you can lift up iron and look.
Take them out and let cool!
If you making cannolies , you need to mold them the second you take pizzelles out of the iron.
Same goes for ice cream cups, mold them while they are still soft.
You can add different flavor to you pizzeles!

5 eggs
2 1/2 cups of flour
1/2 cup of oil
1 cup of sugar
bottle of anise extract
2 tsp. of baking powder
Mix ingredients and spoon into Pizzelle press. Baking time is determined by browning level (Light to Dark)

Making Pizzelles for Easter. Our favorite Pizzelle Recipe!
Pizzelle, mama's recipe - the Italian Classic Cookie!
Italy is known for many things, including pastries and cookies. Every Italian household has made the classic pizzelle at some point, and we are going to make them today using my mother's recipe. So quick and easy, 15 minutes is all you need and they are such a good treat. Great for children and adults - enjoy!
A traditional, classic Italian cookie “Pizzelle”
Recipe makes 12 – 15, 5” pizzelle
Ingredients:
• 260 gm flour (i.e 2 cups)
• 1 TSP baking powder
• 3 Large Eggs
• 2/3 cup sugar (you can use more or less, to taste)
• 2 TSP Vanilla Extract
• 1/3 cup grapeseed or vegetable oil
• 1 tsp Anise extract (Optional) (or use optional Anise liquor)
Process:
• Add the baking powder to the flour, mix, set aside
• In a different bowl, add the eggs and sugar, beat for 2 – 3 minutes (hand blender works great)
• Add the vanilla, oil, and optional anise extract, and beat till all incorporated (about 15 seconds should do it)
• Add your flour mixture to the bowl and blend together using a spatula or wooden spoon, until all flour is incorporated and absorbed, creating a batter.
• Preheat your pizzelle maker
• Once it’s ready, add a heaping TBSP of your batter to each pizzelle pattern, close lid and cook anywhere for 1 minute to 1 ½ minutes, depending on the color and darkness you prefer
• Remove, and place on a cooling rock – OR – if you want to shape them, then shape them immediately, while they are hot
• Serves as is, or sprinkle icing sugar on top
• Enjoy
