How To make Athenian Chicken Rolls
8 skinless boneless chicken breast halves
1/2 cup milk
1 1/2 cups seasoned bread crumbs
1/8 cup olive oil
2 cloves garlic
peeled and crushed
3 tablespoons peanut oil
2 tablespoons butter
3/4 pound spinach :
chopped
3/4 cup sliced mushrooms
1/2 teaspoon salt divided
1 tablespoon flour
1/4 teaspoon pepper :
divided
1 cup chicken broth
1/2 pound feta cheese crumbled and
divided into 8 parts 3/4 cup dry white wine
1/2 lemon :
juiced
1 tablespoon capers
3 eggs -- beaten
1. Place chicken between two pieces of wax paper and gently pound until almost double in size. Sprinkle with 1/4 teaspoon of the salt and 1/8 teaspoon of the pepper.
2. In large frypan, place olive oil and heat to medium temperature. Add garlic and cook, stirring, 30 seconds. Add spinach and saute until barely wilted; stir in remaining 1/4 teaspoon salt and remaining 1/8 teaspoon pepper.
3. Remove mixture from frypan, drain, cool and divide into 8 parts. On each chicken breast, place 1 part of the spinach mixture; sprinkle cheese evenly over chicken, roll up and fasten with toothpicks.
4. In medium bowl, mix eggs and milk. In separate shallow bowl, place bread crumbs. Add chicken, first in egg mixture and then in bread crumbs, dredging to coat.
5. In same frypan, place peanut oil and heat to medium temperature. Add chicken and cook until brown. Remove chicken to pan with cover and bake in 350=B0 oven about 30 minutes or until fork can be inserted with ease.
6. To make sauce, drain most of oil from frypan, leaving brown bits on bottom of pan; add butter and melt over medium heat. Add mushrooms and saute about 2 minutes. Add flour, stirring to blend and thicken. Add chicken broth, wine, lemon juice, and capers. Cook about 4 minutes or until thickened.
7. Place chicken rolls on serving dish and pour sauce over rolls.

Greek Salad Chicken Wrap | Elliniki Wrap
This is a classic sandwich wrap that works any time of year. I can’t tell you how often I get asked for this recipe. It is basically a flavorful Greek salad wrapped up with grilled chicken in a soft, grilled pita wrap. Make this for lunch or dinner any day of the week!
Makes 4 wraps
½ head of romaine lettuce, washed, dried and chopped
1 tomato, cored and chopped
½ cucumber, chopped (about 1 cup)
½ cup Kalamata olives
2 peppercinis (optional)
¼ red onion, finely chopped
½ cup of feta
¼ cup of dressing red wine and olive oil dressing (see recipe below)
4 pitas, freshly grilled*
16 ounces (1 pound) grilled chicken (4 oz per wrap), thinly sliced
Dressing
3 tbsp olive oil
1 tbsp red wine vinegar
½ tsp salt
½ tsp oregano
¼ tsp black pepper
*To grill pitas: bring to grill or stove burner to high heat. Gently brush each side of the pita with olive oil and grill it for about 4 minutes per side, or until there are light char marks and the bread is soft.
First, prepare the salad by adding the chopped lettuce, tomato, cucumber, olive, peppercini, onion, and feta to a bowl. Drizzle it with the dressing and toss it thoroughly so the salad is completely coated.
Place the freshly grilled pitas on a platter.
Evenly distribute the grilled chicken onto the pitas, then evenly distribute the salad on top of the chicken.
Wrap the pitas tightly around the grilled chicken, wrap the bottom with parchment paper so they are easy to hold when you eat them, and serve immediately.

Ingredients:
chicken breast - 900 g (31.74 oz)
salt - 10 g (0.35 oz)
black pepper - 7 g (0.25 oz)
for the filling:
cheese cream - 100 g (3.5 oz)
hard cheese -100 g (3.5 oz)
spinach - 200 g (7 oz)
granulated garlic - 5 g (0.18 oz)
tomato - 1 piece
for the sauce:
mayonnaise - 50 g (1.76 oz)
mustard - 25 g (0.9 oz)
IN THE OVEN 180 °C (356 °F)/25 minutes
hard cheese with parsley - 200 g (7 oz)

for the salad:
French baguette - 1 piece
olive oil - 25 ml (0.85 fl oz)
Fry over medium fire 5 min
cucumbers - 2 pieces
cherry tomatoes - 200 g (7 oz)

This Greek inspired grilled chicken, feta and fresh salad roll is a healthier alternative to store bought calorie laden wraps and rolls.
GREEK CHICKEN ROLL - (Serves - 4)
Ingredients
3 tablespoons Greek yogurt
250 grams boneless chicken, cut into 2 inch thick strips
4 readymade tortillas
1 tablespoon olive oil + for greasing
1 tablespoon lemon juice
1 teaspoon red wine vinegar
1 medium onion, finely chopped
1 tablespoon chopped garlic
1 teaspoon dried thyme
½ teaspoon oregano
1 tablespoon chopped fresh coriander leaves
Salt to taste
Crushed black peppercorns to taste
1 small head Romaine lettuce, shredded
1 medium tomato, deseeded and cut into strips
¼ cup sliced mixed black and green olives
2-3 tablespoons feta cheese
Tzatziki as required
Method
1. Combine olive oil, lemon juice, Greek yogurt, red wine vinegar, onion, garlic, thyme, oregano, coriander leaves, salt, crushed peppercorns and chicken in a bowl and mix well. Set aside to marinate for 10-15 minutes.
2. Heat an electric griller and grease with some olive oil. Place the marinated chicken strips and grill from both sides till done. Transfer on a plate.
3. Take each tortilla, place some grilled chicken, Romaine lettuce, tomato strips, mixed olives, feta cheese and tzatziki in the center and wrap.
4. Diagonally slice and serve immediately with tzatziki.
