How To make Italian Chicken Rolls
4 Boneless skinless chicken
Breast halves 2 Slices mozzarella or
Provolone cheese, cut in 1/2 4 Thin slices pastrami, ham or
Turkey ham 1/3 c Italian style dry bread
Crumbs 1/4 c Grated Parmesan cheese
2 T Fine-chopped fresh parsley
1/4 c Skim milk
Grease an 8x8x2 inch baking dish. Place chicken pieces flat on cutting board. Cover with waxed paper or plastic wrap. Flatten each chicken breast to a 1/2 to 1/4 inch thickness by pounding with a meat mallet or other heavy object. Remove paper or plastic. Place one piece cheese and one slice pastrami or ham on each chicken piece. Fold long sides of each chicken piece in over meat. Roll up chicken from short side; secure with toothpick. Mix bread crumbs, cheese and parsley. Dip chicken rolls into milk; coat evenly with bread crumb mixture. Place seam side down in pan. To serve now: Heat oven to 425 degrees. Bake uncovered about 30 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. To serve from freezer: Preheat oven to 375 degrees. Bake uncovered about 50 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. Freeze now, relax later from: The Austin American Statesman, typed by jessann :)

SAUSAGE ROLL (CREAMY CHICKEN) INGREDIENTS:
Puff pastry (frozen) - 2 sheets
For Filling:
Chopped Onion - 1/4 Cup
Coriander leaves - 2 Tablespoons
Mint leaves - 2 Tablespoons
Green chilli (sliced)- 1 to 2
Chicken Mince - 450 grams
Garlic powder - 1/2 teaspoon
Ginger powder - 1/2 teaspoon
Salt - To taste (1 teaspoon)
Black Pepper - 1/4 teaspoon
White Pepper - 1/4 teaspoon
Desiccated Coconut - 1 Tablespoon
Lemon juice - 1 Tablespoon
Cream - 2 Tablespoons
Butter (soft) - 1 1/2 Tablespoons
Cheddar / Mozzarella Cheese (shredded) - 1/4 cup
Bread crumbs - 1/4 cup
For Brushing:
Egg yolk - 1 large (add 1 Tablespoon milk if egg is smaller in size)
Sesame seeds (as preferred)
Melted Butter - 1 Tablespoon (optional)
Makes 24 mini sausage rolls
CORIANDER & MINT CHUTNEY RECIPE INGREDIENTS:
Coriander Leaves - 1/4 Cup
Mint Leaves - 1/4 Cup
Green Chillies (sliced) - 1 to 2
Yogurt (plain) - 3 Tablespoons
Lemon Juice (fresh) - 1 1/2 Tablespoons
Sugar - 1 teaspoon
Garlic Powder - 1/4 teaspoon
Ginger Powder - 1/4 teaspoon
Cumin (roasted & crushed) - 1/2 teaspoon
Salt - to taste

Chicken Rolls
Chicken rolls with raw ham are a quick and easy recipe, ideal for everyday lunch and dinner. The ingredients needed to prepare these rolls are few and simple: just use thin slices of chicken, good raw ham and sage, roll everything up and you will get tasty and delicious rolls. Prepare the chicken rolls and serve them with a rich mixed salad! Everyone will love it!
Ingredients:
10 thin slices of chicken
10 slices of dry cured ham
1 glass of white wine
35 g of butter
14 leaves of sage
Half glass of hot water
Olive oil
Method
Lay the chicken slices on a working plan and pose at the centre of each slice one leave of sage. Wrap it.
Then wrap it again in a slice of cured ham and fix it with a toothpick.
In a pan, melt about 30 g of butter with a little bit of olive oil
Add the chicken rolls and brown them in both sides. Add in the pan some leaves of sage.
Pour the wine in the pan and let it evaporate on high heat.
Now, low the heat and add half glass of hot water.
Cover and cook for few more minutes.
Suggestion: if it results too liquid, then let the water evaporate a little bit on high heath. Also, if you want a testier dish, you can add in the roll a slice of pancetta or beacon.

Here are the ingredients:
- 1 tbsp extra-virgin olive oil
- 1 onion, chopped
- 3 bell peppers (red, yellow and green), chopped
- salt
- Freshly ground black pepper
- 1 lb. boneless skinless chicken breasts, thinly sliced
- 1 tbsp Italian spice
- 2 tbsp fresh parsley
- 8-9 slices mozzarella cheese
- Hotdog rolls, for serving
- sweet chili sauce for serving
Instructions:
- In a large skillet over medium heat, heat oil.
- Add onions and peppers and season with salt and pepper.
- Cook until very soft, stirring occasionally, 10 to 12 minutes.
- Add chicken and Italian spice and stir to combine
- Cook until chicken is golden, stirring occasionally, 10 minutes.
- Add fresh parsley and top all over with mozzarella slices and cover with a lid. Let melt 1 minute
- Serve chicken-peppers mixture on hotdog rolls
- Serve with sweet chili sauce
- Enjoy
