COPYCAT Arroz Con Pollo & Queso Blanco | Favorite Mexican Restaurant Dish at Home!
Hey, hi, hello everyone and welcome back to Morgs' Menu!
Today's video I show you how I make one of my favorite dishes to get at a Mexican restaurant: Arroz con Pollo (or ACP) topped with queso blanco (or cheese sauce as I say in the video so I don't butcher the pronunciation lol). As I mentioned, I tested a bunch of recipes and these recipes are inspired from two TikTok videos that I'll link below, but full steps of exactly what I did is below as well!

Step-by-Step of the video:
Rice (2 servings)
Ingredients-
1/2 cup white rice
1 cup chicken stock
1 - 2 tbsp. salsa
~1/2 tsp. each of cumin, paprika salt, pepper, garlic powder, onion powder, & everything but the elote
Steps-
1. Preheat oven to 350 F
2. Combine all ingredients into a pan; stir and cover with aluminum foil
3. Bake for 30 - 35 mins until all liquid is absorbed
Chicken
Ingredients-
~8 oz chicken breast or thigh
1 tbsp. avocado oil
~1/2 tsp. each of chili lime seasoning, paprika, cumin, garlic powder, onion powder, salt and pepper
Steps-
1. Slice chicken into strips
2. Season with spices
3. Heat oil in cast iron skillet at medium heat
4. Cook chicken fully and any vegetable add-ins
Queso Blanco (~4 servings)
Ingredients-
1 can evaporated milk
1 tbsp. corn starch
1/2 cup pepper jack, shredded
1 & 1/2 cup sharp white cheddar, shredded
1 can green chilis
1 jalapeno (optional)
~1/2 tsp. each of salt, pepper, cumin, everything but the elote, paprika, garlic powder, and onion powder
Steps-
1. Shred cheese and dice jalapeños if needed
2. In a pan at medium to medium high heat, add in milk and corn starch
3. Whisk together until bubbly
4. Slightly turn down heat and slowly stir in cheese
5. Once smooth, add in remaining ingredients and let simmer until sauce thickens
6. Serve over rice and chicken or as a dip for chips

SLOW COOKER QUESO CHICKEN

RECIPE:
INGREDIENTS:
2-4 lbs. boneless skinless chicken breast skinless chicken breast
1.25 oz. taco seasoning (one packet)
8 oz. cream cheese
10 oz. Rotel Tomatoes (can diced tomatoes and chiles)
15 oz. salsa con queso (jarred nacho cheese)
1 lime juiced
SLOW COOKER SIZE: 6- QUART OR LARGER
INSTRUCTIONS:
Prepare the slow cooker with nonstick cooking spray. Place the chicken breasts in the bottom of the slow cooker.
Sprinkle the taco seasoning over the chicken and then dot with the cream cheese. Pour the diced tomatoes and chilies over the cream cheese.
Cover the slow cooker and cook on low for 5 to 6 hours.
Shred the chicken with two forks. Then, stir in the salsa con queso and lime juice.
Serve over nachos, tacos, or rice with your choice of toppings.

Sometimes this is called a “queso flameado” but queso flameado is usually lit on fire with a shot of tequila - we’re not doing that today. We’re making a simple choriqueso the way we used to experience it here in
South Texas on the border. Sometimes this is made with rajas, sometimes with mushrooms or other chile pepper and onion toppings, but today we’re keeping it simple.
A lot of my barbecue passion and experience came from my father and grandfather, but the choriqueso and cabrito experience came from my father in law – Frank Nieto!
Today we’re cooking over the fire on the ProPit RPG Grill but you can cook this on the stove top or in the oven, whatever works best for you. All you need for this recipe is two packages of Chorizo de San Manuel, our favorite chorizo, and two packs of queso oaxaca.
This recipe is so, so easy to make. All we have to do is cook the chorizo in the pan, add the grated cheese, and then pull yourself a big ol delicious choriqueso taco. You can top this with your favorite salsa, guacamole, or anything else you like. Let’s fire it up and cook some choriqueso!
