3 c Cooked brown rice (1 1/2
-cups uncooked), cooked with Salt and pepper 1 1/3 c Cooked black beans or
-blackeyed peas, pinto -beans, Etc. (about 1/2 cup -uncooked) 3 Cloves garlic, minced
1 lg Onion, chopped
1 sm Can chiles, chopped
1/2 lb Ricotta cheese, thinned with
-a little low fat milk or Yogurt until spreadable 3/4 lb Shredded Monterrey Jack
-cheese 1/2 c Shredded cheddar cheese
Garnishes (optional): chopped black olives, onions, fresh parsley Preheat oven to 350 degree F. Mix together rice, beans, garlic, onion, and chilies. In a casserole, spread alternating layers of the rice-beans mixture, ricotta cheese, and jack cheese, ending with a layer of rice and beans. Bake for 30 minutes. During the last few minutes of baking, sprinkle cheddar cheese over the top. Garnish before serving. Croquetas de Arroz con Queso Oaxaca
Muchachitos hoy vamos a preparar unas deliciosas croquetas de arroz con queso Oaxaca.
Ingredientes:
1. 2 tazas de arroz.
2. 4 tazas de agua.
3. 1 taza de queso Oaxaca - deshebrado -.
4. 1 taza de pan molido.
5. 1 huevo.
6. Aceite.
7. Sal - al gusto -.
8. Pimienta - al gusto -.
Procedimiento:
1. Colocamos una olla honda en el fuego.
2. Añadimos aceite - y dejamos calentar -.
3. Añadimos el arroz.
4. Dejamos freír por un lapso de 5 minutos.
5. Añadimos el agua.
6. Tapamos la olla.
7. Dejamos hevir.
8. Destapamos la olla.
9. Dejamos a fuego bajo durante 30 minutos - o hasta que el liquido se consuma -.
10. Retiramos del fuego y reservamos.
11. Colocamos un recipiente amplio.
12. Añadimos el huevo.
13. Añadimos sal - al gusto -.
14. Añadimos pimienta - al gusto -.
15. Batimos perfectamente.
16. Tomamos una porción de arroz.
17. Formamos una bolita.
18. Rellenamos con queso Oaxaca - al gusto -.
19. Pasamos por el huevo.
20. Pasamos por el pan molido - y reservamos -.
21. Colocamos una olla honda en el fuego.
22. Añadimos suficiente aceite - y dejamos calentar -.
23. Añadimos las bolitas de arroz.
24. Dejamos freír por un lapso de 10 minutos - por todos lados -.
25. Retiramos del fuego - y colocamos sobre papel absorbente -.
¡Listo! tenemos nuestro arroz rojo con alitas de pollo terminado.

HOW I MAKE CHEESY AREPAS | Arepas Con Queso
Hello my beautiful fam!! Welcome back to my kitchen first of all I want to thank you for being part of our family, and allowing me to be part of yours!!!! ❤️
Today I’m going to share with you how I make a delicious cheesy arepa, now let me tell you I’m Mexican but I loooooove learning different foods from different regions! After watching Encanto, I got inspired to recreate this delicious recipe and let me tell you this will be a recipe to keep in our family! (Thanks to my friend for the little help) Like we have gorditas, Salvadorans have pupusas, Colombia, Venezuela, and Panama have arepas. Which in case you don’t know what an arepa is, an Arepas is a cornmeal cake that originated hundreds of years ago Traditionally, they were cooked on a pan called a budare, they can also be grilled, baked, or fried and can be stuffed with any shredded meat!

Tip!!!! If your dough feels a little dry just add more water!
You can use your favorite meal ring cheese, I personally don’t like mozzarella on this, I tried it and personally not my favorite so I used a mix of queso Oaxaca and Monterey Jack ????
You can use unsalted or salted butter that will just depend on how much additional salt you will add I used salted and added 1 tsp of salt
Ingredients: I got 8 arepas
4 cups precooked white corn meal
1 cup queso cotija
2 cups Monterey Jack, queso Oaxaca or mozzarella
3 1/2 - 3 3/4 cups warm water
2 tbsp salted butter
1 tsp salt

Taco seasoning of choice
1/2 Diced red onion
50g Corn
