Ingredients

cup
rice, long-grain, converted
1
cup
whole tomatoes, mashed (16 oz)
1
cup
mexican style beans (16 oz)
3
each
garlic cloves, minced
1
each
onion, finely chopped
2
tablespoon
vegetable oil
1
cup
cottage cheese
1
cup
green chili peppers, drained (4-oz)
2
cup
montery jack cheese, grated
Directions:
Mix thoroughly all ingredients except one cup of the grated cheese. Pour mixture into well-greased crockpot. Cover and cook on low setting for 6 to 9 hours. Just before serving, sprinkle with reserved grated cheese.
Makes 6 to 8 servings.

I love a good slow cooker meal and this Slow cooked Chicken and rice with vegetables is perfect for a week dinner. The chicken and rice are well seasoned and full of flavor.
KITCHEN UTENSILS

INGREDIENTS
2 cups rice
2 cups frozen vegetables
2 cups chicken broth
1 Tbs soy sauce
Salt to taste
4 bone in skin on chicken thighs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon dried oregano
1/2 teaspoon dried parsley
1/2 teaspoon dried thyme
salt and pepper to taste
olive oil
1 medium onion, sliced
3 cloves garlic, minced
Brief Instruction
* Pour rice into slow cooker
* Add frozen veggies, chicken broth, soy sauce and salt, mix together then set aside.
* Mix all spices together then season both sides of chicken of chicken thighs.
* Heat oil in pan on medium high heat, then sear chicken 2 - 3 minutes on both sides.
* Add Seared chicken to slow cooker
* Saute minced onions in the pan until caramelized.
*Add minced garlic to onions and saute for 30 seconds to get flavorful.
*Add Sauted onions and garlic to the slow cooker.
*Cover and Slow cook on high for 4 hours

Mexican rice is something we had at least twice a week growing up, I have continued the tradition to this day, and I guess it’s because this Mexican rice is delicious and because it also goes well with just about anything. People prepare this side dish many different ways, some use tomato sauce, some use tomato paste and some only use tomato flavored chicken broth but I like to use fresh tomatoes, garlic and spices along with chicken broth instead of water , and that’s where the perfect authentic flavor comes in. Mexican rice is very easy to prepare and it’s delicious when when done right. In this video I will show you how to make it step by step. I hope you give it a try. ❤️

INGREDIENTS __________________________
1 C. Long grain rice
2 medium Roma tomatoes
1/4 small onion
2 large garlic cloves
1/2 tsp freshly ground cumin (or store bought)
1/2 tsp onion powder
Salt as needed
Fresh ground black pepper
1 Tbsp Tomato bouillon chicken flavor (I like KNORR)
2 C. Chicken broth
2 Tbsp canola oil
EXTRAS -(small piece onion, 1 garlic clove when browning rice)
ADDED TIPS-
1. You can use jasmine rice
2. I like to pass my tomato mixture through a sieve
3. Do not lift lid when cooking
4. Let sit 15 minutes after cooking
5 cooking time can differ depending on your stove, skillet and temperature setting

Hey Y'all! This is a great, easy crock pot/slow cooker recipe that will meal prep you for a week or feed a crowd!! It is my take on a Spanish classic with some cheese added.......cause.....cheese makes everything better! It's only second to butter in my love languages!! LOL! INGREDIENTS:
2-3 pounds of boneless skinless chicken thighs
3 chopped large bell peppers (color of your choice; I used red and yellow)
1 chopped onion
3-4 cloves of garlic (minced)
1 15 oz can of tomato sauce
1 can of Rotel (diced tomatoes and peppers)
1.5 cups chicken broth
2 Tbsp chili powder
1 Tbsp paprika
Salt
Pepper
1/4-1/2 tsp ground cayenne pepper
1/2 tsp cumin
1/2 tsp saffron or 1/4 teaspoon turmeric
2.5 cups instant brown rice (like Minute Rice)
1 cup frozen green peas
1/2-3/4 cup green olives with pimentos (chopped or sliced)
1-2 cups shredded cheddar jack cheese
