How To make Apple Pecan Bread Pudding
Ingredients

pecans, coarsely chopped

each
eggs

each
raisin bread slices, diced
2
cup
half & half OR milk
2
each
apples, green
1/4
cup
bourbon OR brandy
1
cup
sugar
1/4
cup
butter OR margarine, melted
1
teaspoon
cinnamon
1/2
teaspoon
nutmeg
1
vanilla ice cream (optional)
Directions:
Preheat oven to 350 degrees. Spread pecans in a shallow baking pan and bake until golden, about 8-10 minutes, stirring occasionally.
Meanwhile, place bread cubes in a greased 3 quart or larger slow cooker. Peel, core and thinly slice the apples. Mix lightly together the sugar, cinnamon and nutmeg, add eggs and mix well. Blend in half and half or milk and then stir in bourbon or brandy.
Lightly mix pecans with bread and apples. Pour egg mixture over bread. Drizzle with butter. Cover and cook on low until apples are tender when pierced and custard is set, about 3 1/2 to 4 1/2 hours.
Let pudding stand, covered, for about 15 minutes. Serve warm with ice cream, if desired.

PECAN PIE BREAD PUDDING RECIPE:
Ingredients:
1 loaf day old French bread
2 ½ cups milk
1 cup half & half
4 large eggs, lightly beaten
1 cup granulated sugar
1 tbsp vanilla extract
Pinch salt
½ tsp cinnamon
¼ cup packed brown sugar
1 cup pecans, chopped
Directions:
1. Preheat oven to 350F.
2. Cube bread and lightly toast in the oven for approximately 7 minutes. Allow to cool and then add to large mixing bowl.
3. In another bowl, whisk together the eggs, milk, half & half, sugars, salt, cinnamon and vanilla. Add pecans and mix thoroughly. Pour mixture over toasted bread and let sit for at least 10 minutes so mixture can incorporate in.
4. In a greased 8X8 baking dish, add in the mixture and sprinkle with some more chopped pecans.
5. Place pan on cookie sheet so any boil over is caught. Bake at 350F for 45-55 minutes or until center is still slightly wiggly.
6. Let cool for at least 10 minutes before serving.

Ingredients:
1 3/4 cup all purpose flour
2 1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp salt
1 tsp baking powder
2 eggs
3/4 cup sugar
1/3 cup veg oil
2 tbsp applesauce
2 cups finely chopped peeled apples
1 cup chopped pecans
1 tbsp sugar (for topping)
1/4 tsp cinnamon (for topping)
Directions:
To a bowl, mix together the eggs, sugar, veg oil, and applesauce. Add in the dry ingredients, careful not to over mix.
Finely chop 2 cups worth of apples, add those to the bowl. Coarsely chop 1 cup of pecans, add half to the bowl. Reserve the other half of pecans for the topping.
Mix in the apples and pecans. To a parchment lined 9x5 inch baking dish, or sprayed with nonstick cooking spray, add in the batter and spread it out as evenly as possible. It will be thick, do not thin out the batter. If you do, the apples may sink to the bottom during baking.
With the remaining pecans, add in the sugar and cinnamon and shake. Take the topping and sprinkle it over the top of the batter. Into the oven at 350 degrees for 55-60 minutes.
Remove from the baking dish as soon as it comes out of the oven to prevent the crunchy topping from getting soft from steam.
Let sit until cooled before slicing. Enjoy!

Eggless apple bread pudding | Apple cinnamon bread pudding | Easy bread pudding
Eggless Apple bread pudding
Bread pudding is one of the easiest dessert to make. It packs great flavour to end your meals keeping your testbuds on a high! In this recipe, Apple and cinnamon is used to boost some flavour. Also, it is eggless and does not use prepacked custard powder.
Ingredients
Bread - 4-5 slices or enough to fill bowl.
Apple - 1
Cinnamon powder - 1/2 teaspoon
Sugar -1/2 cup
Milk -1 cup
Corn starch - 1 table spoon
Vanilla extract -1/2 teaspoon
Almonds and raisins
Baking time - 1 hour at 355 F / 180 C
Tips :
1. Use a hard bread or 2-3 days old bread.
2. Bake till the top is golden brown
3. Do not over cook apple. Microwave apple; it works best.
4. Tastes best after the pudding is cooled.
