2-3 large ripe bananas, mashed will equal to around 1 cup (approx. 8 oz.)
1-3/4 cups (210 grams) all purpose flour

DARK CHOCOLATE BARK RECIPE
Ingredients:
7 oz dark chocolate (200g)
1/2 cup almonds (100g)
1/2 cup peanuts, raw (100g)
1 tbsp maple syrup
pinch of salt
NUTRITIONAL INFO (per piece):
107 calories, fat 7.6g, carb 9.2g, protein 3g
Preparation:
For roasted nuts: in a bowl combine almonds, peanuts and maple syrup.
Spread in air-fryer basket, sprinkle with salt and air-fry for 10 minutes at 340F (170C).
Break the chocolate into small pieces and melt in the microwave, stirring every 30 seconds.
Add the roasted nuts and stir until all the nuts are coated.
Spread the mixture on a lined baking tray, top with some extra nuts and put in the freezer for 30 minutes.
Cut into bite sized pieces and store in the fridge or freezer.
Enjoy!
Fig Brazil Nut CacaoVanilla Orange Love Bombs
Decadent and healthy all in one luscious bite! And relatively easy to concoct! Please leave comments below and let me know how it goes!
Recipe as follows:
1 C brazil nuts
1 C calmyrna figs
1/2 C raw cacao (chocolate) powder
Juice of 1 orange, strained
Zest of 1 orange
1 vanilla pod, scraped (or 1 ts. vanilla extract)
1/4 ts cinnamon
1/8 ts cardamom
1/8 ts himalayan pink salt
1-2 tb raw honey
In a food processor, blend brazil nuts until they are crumbly and fine. Add all the other ingredients and blend until it forms a gooey ball and all ingredients are well-incorporated.
Form into 1 inch round balls and roll and coat in raw cacao powder. Refrigerate for minimum 2 hours and voila! Delicious, nutritious, sexy decadent YUM!
Makes approx. 22 love bombs

Even though I have been a non meat eater for 27 years I have somehow never cooked a nut roast, until now. I wanted to create something packed full of protein that's delicious and easy to make. Adding apple gives the nut roast a subtle sweetness like apple sauce with a roast dinner, plus extra nutrients.
TIP: When you remove the tin from the oven let it sit for 10-15 minutes to cool slightly and set. If you remove it too quickly it can fall apart. I cooked mine earlier in the day and warmed it up for dinner. The following day I had it cold with a salad. Tasty hot or cold. In the video I'd put some tomato pesto on top which works really well.
Ingredients
200g precooked puy lentils (I used a ready to cook pack)
½ pint of vegetable stock
3 tbsp nutritional yeast
1 tsp basil, rosemary, parsley, caraway seeds & paprika
½ a chopped onion
1 crushed garlic clove
2 grated carrots
1 grated apple (skin left on)
1 chopped red pepper
100g chopped nuts (I used Brazil)
1 tbsp tomato puree
1 chia egg (1 tbsp seeds & 3 tbsp water. Let sit for 15 minutes to soak up liquid)
75g oats (use gluten free if intolerant)
Season with salt and pepper
Method
Preheat oven 190ºC/374ºF
Lightly fry the chopped onion, pepper and garlic for a few minutes until they soften. Add the carrots, apple, lentils, oats, chia egg, stock, herbs, spices, nutritional yeast, tomato puree & nuts. Stir thoroughly while on a medium heat for a few minutes until slightly simmering. Using an oiled/lined baking tin pour in the mix and spread evenly, pressing down slightly. Bake for 35-40 minutes in the centre of the oven.
Perfect with a roast dinner with a splash of gravy.

Shortbread Jam Squares
Makes: 9
INGREDIENTS
125 grams butter
50 grams caster sugar
1 egg
2 tablespoons oil
1 teaspoon vanilla extract
350 grams plain flour
2 teaspoons baking powder
400 grams blackcurrant jam
Icing sugar, for dusting
PREPARATION
1. Preheat the oven to 180˚C (350˚F).
2. In a bowl, whisk together the butter and sugar until combined.
3. Whisk in the egg, oil, and vanilla extract.
4. Mix in the baking powder and 250 grams of the flour with a spoon until combined.
5. Bring the mixture together using your hands to make a dough.
6. Spray a 9 inch/25 centimeter square baking tray with cooking oil.
7. Spread out half of the dough on the tray.
8. Spread the blackcurrant jam on top.
9. With the remaining dough, mix in the remaining 100 grams flour and rub with your fingers to make a crumb like texture.
10. Sprinkle the crumbs on top of the jam.
11. Bake for 20 minutes, until golden brown on top.
12. Leave to cool for around 20 minutes, the jam will be hot!
13. Sieve icing sugar on top.
14. Cut into squares.
15. Enjoy!
