INGREDIENTS
1 1/2 cups egg whites at room temperature
(I used 12 eggs)
1 1/2 cups confectioners sugar
1 cup cake flour (or all-purpose flour)
1 1/2 tsp cream of tartar
1 tsp vanilla extract
1 cup granulated sugar
Sift confectioners sugar and flour together three times.
Add egg whites, vanilla extract, and cream of tartar to a large mixing bowl, or to the bowl of a stand mixer. Mix together at medium speed until soft peaks form. Gradually add the granulated sugar to the mixture, two tablespoons at a time, until the egg whites reach stiff peaks. They will be shiny.
Sift about one fourth of the flour mixture over the beaten egg whites. Fold together gently, until combined. Repeat with the remaining 3/4 of the flour mixture, sifting and folding one-fourth at a time, until everything is combined.
Transfer the mixture to an ungreased 10-inch tube pan, making sure to smooth the surface and wipe away any drips from the edges of the pan (they will burn quickly).
Bake on the bottom rack of a 350°F oven, for 40-45 minutes, until golden.
Once removed from the oven, immediately invert the pan onto a cooling rack and allow it to cool completely. Once cooled, it can be gently sliced using a serrated knife.
Serve plain, glazed, with fresh fruit, or chocolate sauce. The options are unlimited!
