Light As Air Angel Biscuits
These biscuits are made with both baking powder and yeast, and are a cross between a biscuit and a roll. The dough does not have to be kneaded--just cut out and place in a warm place let rise for one hour. When you bake them, start out with a cold oven then turn oven on to 450 degrees for 10-15 minutes if using a thin bottom baking pan, twenty minutes if using a thick bottom pan.
Easy to make using bread flour and non-fat dry milk, they freeze very well for at least 6 weeks.
Ingredients:
2 sticks (1 cup) salted butter, softened
7 cups bread flour
1 tablespoon dry yeast
1 tablespoon baking powder
1/3 cup sugar
2 teaspoons salt
2/3 cup nonfat dry milk
1/2 cup lukewarm water (to start yeast)
2 cups water (to mix with milk)
Directions:
1. In a mixing cup, add yeast, 1 teaspoon of the sugar, and 1/2 cup lukewarm water, and stir. Set aside while it activates.
2. In a separate bowl, add dry milk to the 2/3 cup water and stir until dissolved.
3. In a large mixing bowl, add butter, baking powder, salt, rest of the sugar, and about 3 cups of the flour. Using your hands or a cutter, cut the butter into the flour. Add another cup and continue cutting in. Add the 5th cup and cut in. There should be pea sized crumbs at this point.
4. Pour yeast mix into milk mix and stir. Add this mixture to the flour mixture and stir until a dough is formed. Add additional flour until biscuit dough consistency (about another 2 cups),
5. Turn out dough onto lightly floured surface and flatten to 1/2 inch thickness. Cut out biscuits and place on a greased baking sheet. Cover and let rise 1 to 1 1/2 hours.
6. Place in cold oven and turn on to heat to 450. From time you put them in to taking them out should be about 15-20 minutes. Remember, start with a cold oven.
7. Brush tops with melted butter and serve.
Flaky Biscuits for Two using Whole Milk
This is how to make great, flaky biscuits using ordinary All Purpose flour and whole milk. I hope you enjoy making them.

Ingredients
2 1/4 tsp dry active yeast
2 tbsp warm water
2 cups warm buttermilk
5 cups all-purpose flour
1 tsp baking soda
2 tsp baking powder
1 1/2 tsp salt
2 tbsp sugar
1 cup shortening
melted butter for top of biscuits
Instructions
In a bowl combine yeast and warm water and let sit until foamy. Add warm buttermilk and set aside. In a separate bowl combine flour, baking soda, baking powder, salt, and sugar. Give a slight stir. Cut in shortening until mixture has a crumble texture. Pour flour mixture into yeast mixture and stir to combine. Dump dough onto a floured surface and begin folding dough over on itself to create layers. Gently roll out to about 2 inches in thickness. Cut out biscuits and place on baking tray lined with parchment paper. Make sure biscuits are touching as this will help them rise when baked. Cover and let rise for 30 minutes. Brush tops with melted butter. Bake in a 400 degree oven for 15 to 20 minutes until golden brown.

It’s Spring and Easter time!
In this Video, I am making some moist, light, fluffy, and flaky Angel Biscuits; it is cross between a regular Buttermilk Biscuit and Yeast Rolls. It is so delicious it just melts in your mouth. These Biscuits will be great to serve for Easter Dinner or even Easter Breakfast or Brunch. Your Guest will enjoy these!

2 tbsp active dry yeast
1 tsp white sugar
1/4 cup warm water (110 Degrees)
5 cups self rising flour
1/4 cup white sugar
1 tsp baking soda
4 tbsp cold butter flavor shortening
1 cup (2 sticks) unsalted butter, frozen and grated (using the large holes)
1 cup cold evaporated milk
In a measuring cup, add warm water, yeast, and sugar. Stir until well combined and let stand until foamy, about 5 minutes.
In a large bowl, add flour, baking soda, and sugar; whisk until well incorporated. Add shortening and cut it in with your fingers until the mixture resembles coarse meal. Add butter and toss until evenly coated. Add evaporated milk and yeast mixture and fold until evenly moistened. Knead dough gently on a floured surface until it forms a ball. Place dough in a large bowl greased with cooking spray, cover tightly with plastic wrap and refrigerate for 2 1/2 hours. Place dough on a floured surface, knead it a little bit and using a rolling pin, roll it into a rectangle (about 1/2 inch). Fold the dough in the top and bottom thirds (like you’re folding a letter). Using a floured glass or biscuit cutter, cut dough into rounds. (You can make the Biscuits regular or jumbo size). Place Biscuits onto a greased round cake pan or long cookie sheet. (Greased with cooking spray, butter, or shortening). Cover them again loosely with plastic wrap, put them in a warm place and let them rise again for 30 minutes.
In the meantime, preheat oven to 350 Degrees.
Place Biscuits in the oven and bake for 15-20 minutes until golden brown and baked through. (Depends on how hot your oven is). Remove from oven and enjoy them hot or warm with butter and/or jelly, honey, or maple syrup.
