MIX
3 Parts Butter and Shortening (1 cup)
1 Part sugar (1/3 cup)
2 Parts ground almonds (2/3 cup)
SIFT
5 Parts Plain Flour (1 2/3 cup)
salt to taste (1/4 teaspoon)
as always, add more flour if too gooey, or more butter if too dry, please use your brain here.
Mix and Kneed all, wrap in kitchen paper and put in refrigerator for several hours.
Roll out into finger width logs about 2-3 inches (5-7 cm) long
Put on baking tray and cook 15 minute
325F (170C)
Mix one cup powdered sugar with 1 teaspoon cinnamon
dip warm cookies in this mixture,
store in papered cookie can/tin.

The 4 Ingredient BUTTERY Almond Crescents Cookies That Melt In Your Mouth
These buttery almond crescent cookies will melt in your mouth. They are a traditional Italian Christmas cookie, however I can eat these all year round. They're almost like a shortbread but with a beautiful almond flavour and crunch. These are perfect with a cup of tea or coffee.

Preheat Oven to 180°C (convection), Bake for 15-20 minutes
Almond Crescent Cookie Recipe
225g Salted Butter, softened
150g Caster Sugar
75g Almonds, finely chopped
250g All Purpose Flour, plus extra if required

TIP #1
If you don't have almonds without the skin on you can simply blanch almonds for 1 minute and the skins will easily peel off. Let them cool and dry before adding them into the dough.
TIP #2
Using salted butter balances out the sweetness and enhances the buttery flavour of the cookie. If you don't have any use unsalted butter and add in 1/4tsp salt.

Recipe Yield: 12 Cookies
Recipe Ingredients:
200 g Almond Paste: DGF 50%
140 g Sugar
40 g Nuts: Almond Powder
20 g Honey
40 g Egg White
50 g Nuts: Almond Sliced
Method:
Mix all the ingredients together except the flaked almonds.
For large almond crescent, scale the dough in 50 gr. And shape it round and long.
Roll each one in the flaked almonds and bake by 180c until golden brown.
Immediately after baking brush them with gummi arabicum.
Once cold dip the end in dark chocolate.

Ingredients:
1 cup (225 grams) unsalted butter, softened
1/3 cup (67 grams) granulated white sugar
1 large (20 grams) egg yolk
1 teaspoon (4 grams) vanilla extract
1 2/3 cup (210 grams) all purpose flour
3/4 cup + 2 tablespoons (100 grams) almond flour
1/4 teaspoon (1 gram) salt
Powdered sugar for dusting
Instructions:
1. In the bowl of your electric mixer or hand mixer, beat 1 cup of softened butter and 1/3 cup sugar until creamy (2-3 minutes).
2. Add 1 egg yolk and 1 teaspoon vanilla extract and beat until incorporated. Scrape down the sides and bottom of the bowl as needed.
3. Add 1 2/3 cup of all purpose flour, 3/4 + 2 tablespoons of almond flour and 1/4 teaspoon of salt and beat until just combined. Do not over mix!
4. Chill the dough for 30 minutes.
5. Heat your oven to 350 degrees F (175 degrees C) and line your cookie sheets with parchment paper or silicon mats.
6. Scoop out about a tablespoon (16 grams) of dough and form a log. Bend it to form a crescent moon shape and place it in a prepare cookie sheet about 1 inch apart and bake on 350F (175 C ) for 12-15 minutes or until they start to turn light brown.
7. Remove from the oven. They are soft but will harden as they cool. Let it cool completely before dusting with powdered sugar.
8. Store cookies in a tightly sealed container for up to 5 days.
