How To make Almond Butter Coffee Cake
1/4 c Sugar
1/4 ts Salt
1/4 c Shortening
1 c Milk, scalded
1/2 Yeast cake
1 Egg
3 1/2 c Sifted flour
1/16 ts Mace
1/16 ts Cardamom
Add sugar, salt and shortening to milk and cool to lukewarm. Add crumbled yeast and let stand 5 minutes. Add egg and 1 3/4 cups flour; beat well. Add remaining flour sifted with spices; then knead well. Let rise until doubled in bulk, about 1 1/2 hours. Knead down and let rise again. Shape into 2 coffee cakes and place in greased pans. Let rise 15 minutes. Spread almond mixture on top and let rise until doubled in bulk. Bake in a 375 degree oven for 45 minutes. Makes 2 cakes. Randy Rigg The Pinnacle Club BBS 812-963-9139

This skillet cake is a great after dinner baking project! The cake comes together quickly, and bakes up easy in a cast iron pan. It's dense, moist, and rich from the addition of creme fraiche… and the almond extract doesn't hurt either!
Serves 8 to 10
Ingredients:
1/2 cup (125 mL) melted butter
1/4 cup (60 mL) creme fraiche
1½ cups (375 mL) sugar, plus 1½ tsp (7 mL) for sprinkling
2 eggs
1½ cups (375 mL) all-purpose flour
1 pinch salt
1 tsp (5 mL) almond extract
1/3 cup (75 mL) slivered almonds
Method:
Preheat the oven to 350° F (180º C).
Butter a 10-inch cast-iron skillet.
Cream together the butter, creme fraiche, and 1½ cups of the sugar.
Add the eggs and beat until well-incorporated.
Add the almond extract, salt, and flour. Mix well, then pour into the prepared skillet.
Sprinkle the cake with almonds and remaining sugar.
Bake for 30 to 40 minutes, until golden brown.
Cool before serving.

Lemon Coconut Almond Cake (SUPER EASY)
Many people have tried this now and no one thinks of it as a gluten free cake. It's just a delicious cake! Coconut and lemon is a lovely flavour combination with the subtle flavour of almond meal. Lovely springy, moist crumb. Bonus: Just about the fastest, easiest cake recipe I know!

The flavor of this cake is light and nutty with a little bit of sweetness. I love the smell of roasted almonds in this cake. The chocolate and coffee is not overwhelming either, making this cake enjoyable any time of the day.
Chocolate Almond Coffee Cake from Scratch | EASY RICE COOKER CAKE RECIPES
INGREDIENTS:
• 1 tbsp (5g) INSTANT BLACK COFFEE
• 1 tbsp (8g) COCOA POWDER
• 1/2 cup (125ml) HOT WATER
• 1 1/2 cup (210g) ALL PURPOSE FLOUR
• 2 tsp (8g) BAKING POWDER
• 1/4 tsp BAKING SODA
• 2 EGGS
• 1/2 cup (100g) SUGAR
• 3 tbsp (45g) OIL
• 1 tsp (5g) VANILLA EXTRACT
• 1 tbsp (15g) BUTTER (room temp soft)
• 1/4 cup (35g) CHOPPED ALMOND (add some into the batter as well)
TOPPINGS (optional):
• POWDERED SUGAR
• COCOA POWDER
• FRESH BERRIES
• CHOCOLATE/VANILLA ICE CREAM
HOW TO MAKE IT:
1. In a small cup or bowl, mix coffee, cocoa powder and hot water then set it a side
2. In a bowl, whisk flour, baking powder and baking soda to combined
3. In large mixing bowl, beat eggs and sugar for about 2 minutes. Then add oil and vanilla and mix to combine. Add the chocolate coffee mixture and beat about 15 seconds
4. Sift in the flour mixture, one half at a time, beating about 10-15 seconds with each add. Be sure to scrape the sides and bottom
5. Greased and lined your pot/pan with butter, going up about 2 inches (6 cm) high. Then sprinkle chopped almonds to coat the sides and bottom
6. Pour batter on top of the chopped almonds and cover with paper towel to catch condensation
7. Bake for 2 Bake Cycles (1 hour) then check. Rice cooker varies so bake longer as needed
8. Cool for 20-30 minutes before flipping it onto a serving tray. Enjoy as it or top with your favorite toppings
OVEN BAKING:
Bake in pre-heated oven of 350F (175C) for 35-45 minutes. Ovens varied so check around 35 minutes and bake longer as needed.

Almond Boterkoek (Dutch Almond Butter Cake) Recipe
This upgrade of a Boterkoek, a Dutch favorite, is rich, moist and loaded with almond flavor. The simple set of ingredients and simplicity of the recipe will put this on your go-to list. Perfect as a fancy dessert but works as a coffee cake, too. Call it a Boterkoek or call it a Butter Cake, oh my, this is a winner!
As a bonus in the video, a more traditional Boterkoek (butter cake) is shown, too. Even easier to bake and is wonderfully delicious, too!

Almond BoterKoek (Almond Butter Cake) Ingredients
- almond paste - 4 oz (114g)
- unsalted butter - 8 oz (230g)
- white sugar - 3/4 C (150g)
- brown sugar - 1/4 C (55g)
- egg - 1
- vanilla - 1 tsp
- almond extract - 1/2 tsp
- salt - a pinch
- AP flour - 1 3/4 C (210g)
Topping
-- egg yolk and water (for brushing top)
-- egg white
-- sugar - 2 T (25g)
-- sliced almonds - 1 C (85g)
Bake 350° 40 - 45 minutes until the top is golden brown. Cake will be soft but will solidify somewhat as it cools.

Traditional Boterkoek (Butter Cake) Ingredients
- Unsalted Butter - 8 oz + 1Tbl (250g)
- Brown Sugar (or White/Brown combo) - 1 1/4 C (250g)
- Egg - 1
- Vanilla - 1 tsp
- salt - a pinch
- AP flour - 2 C (250g)
- Topping
-- egg wash (yolk with water or whole egg with water)
Bake 350° 20 - 25 minutes until the top is golden brown. Cake will be soft but will solidify somewhat as it cools.
