How To make Aebleskiver(Danish Pancake Balls)
4 c Flour
6 tb Sugar
1 1/4 ts Salt
optional
8 ts Baking powder
8 Eggs :
(separated)
1 1/2 c Cream
2 c Milk
Sift together the flour, sugar , salt and baking powder (set aside). In a mixing bowl beat the egg yolks well, then add the cream and milk. Mix into this the dry ingredients that have been sifted together. Beat egg whites till stiff, and carefully fold into batter. In hot Aebleskiver pan put 1 1/2 tsp. oil in each cup. Then spoon or pour in batter just to the top of each cup. Bake (fry) until delicately brown underneath, loosen around edges with fork, quickly turn and brown other side. Use cake tester to determine when done. Be careful not to get your pan too hot as the aebleskiver burn easily. Serve dipped in sugar or syrup, or good quality jam or jelly. Makes about 50. Æbleskiver (also written as ebelskiver or ebleskiver in English) are light and fluffy pancake spheres especially popular in Denmark around Christmas. We make them in Norway as well and call them munker. Recipe:
Sweet & Savory Stuffed Aebleskivers / Stuffed Danish Pancake Balls Recipe
Shows how to make stuffed Danish pancake balls, known as aebleskivers, with various fillings inside. Typically, aebleskivers are covered with powdered sugar and/or are served with jam on top, but they can also be prepared with either sweet or savory fillings inside, to create an even tastier treat.
Quite simply, you can put almost anything inside an aebleskiver, and it will turn out quite delicious, but this video suggests the following sweet & savory fillings to stuff inside these tasty pancake balls:
1) Raspberry Jam
2) Nutella
3) Mozzarella Cheese
4) Peanut Butter & Jelly
5) Chocolate Chips
6) Ham & Cheese
7) Nutella-Banana

Make Delicious Danish Pancakes with the Electric Ebelskiver Maker | Williams-Sonoma
Indulge your sweet tooth by making pancakes in an instant with the Electric Ebelskiver Maker. In this video, Williams-Sonoma Product Expert Kara shows us how to use the Electric Ebelskiver Maker to make delicious pancakes filled with strawberry jam.
Kara starts by heating the Electric Ebelskiver Maker using the preset heat settings and adds some butter to each well so that the pancakes release easily. She then adds a layer of pancake mix and tops with a spoonful of strawberry jam. You can experiment with a variety of flavors and add any other jam, chocolate sauce, caramel sauce or even cheese for savory ebelskivers. After the middle layer is done, cover the mixture with a final layer of pancake mix.
Once the ebelskivers cook for a couple of minutes on one side, flip them. After the ebelskivers are completely cooked on both the sides, transfer them to a serving plate. Sprinkle some powdered sugar over the ebelskivers and serve them with some fresh strawberries and berries.
Another great advantage of this electric pancake maker is that it is very easy to clean. Just wipe the pancake maker with a damp cloth after it cools down. Have fun experimenting with a variety of other pancake mixes and fills!

Aebleskivers
I purchased this cast iron Aebleskiver pan at an antique / thrift store a few months ago and have enjoyed using it ever since! The Aebleskivers were tasty and easy to make. No yeast needed. The recipe is from myrecipes.com and here is the link.
Although there are many recipes for Aebleskivers, I liked this recipe because it made a small amount of aebleskivers, enough for the two of us. I got about 18 round Danish donuts.
They suggested using cinnamon or cardamon. I used cinnamon. Some Aebleskiver recipes call for separating the egg whites and beating them separately. Although this recipe did not call for that, I did it anyway, and I think that extra step made for a very tasty donut.
Although you can make the Aebleskivers with a filling - some ideas are jam, blueberries, apples, chocolate chip - they can also be made with no filling and the filling can be served on the side. I've topped these with cinnamon and sugar and powdered sugar. They are also delicious with no topping!
