How To make Adas Careh (Lentil Butter)
Ingredients

cup
lentils, uncooked
2
teaspoons
salt
1/4
cup
water
1
tablespoon
olive oil
6
each
green onions, sliced
1
small
garlic clove, minced
2
tablespoons
parsley
1
dash
cayenne
1
dash
turmeric
1/4
cup
water, as needed
Directions:
Combine water, lentils, salt in a pot. Cook until lentils are soft. Drain,
reserve stock.
Heat oil in skillet and saute onions and garlic until onions are translucent. Add parsley and spices and cook another minute. Set aside.
Combine lentils, cooking water & onion mixture in a food processor, adding
more water a tablespoon at a time as needed until the mixture reaches a spreadable
consistency.
Refrigerate a few hours before serving. Spread on whole grain crackers or
use as a vegetable dip. Great vegetarian dish.

5 cups of water
15 g of butter
1 tsp of turmeric
1 tsp of salt also u can add chicken stock it will give the soup rich taste

Episode 7: Greek lentil soup
Greek Lentil Soup
* 1 large onion, diced
* 3 garlic cloves, chopped
* 10 ounces spinach, chopped (frozen OK)
* 2 large potatoes, diced
* 1 dried or fresh pepper
* 1/2 lbs green lentils
* 2 teaspoons of coriander seeds
* 2 teaspoons of dried oregano
* 3 bay leaves
* 1/3 cup lemon juice
* Thin sliced lemons to garnish
* Olive oil for pan and to garnish
* Pepper to taste
* Salt to taste
Cook onion in oil. Add garlic. Add spinach and potatoes and lentils. Cover with stock or water, add herbs and spices and pepper, and boil at a hard boil for 5 minutes. Turn down heat and add more liquid if necessary. Simmer for 10-20 minutes. When lentils are cooked add lemon juice and salt and pepper to taste.
Quick Biscuits
* 3 cups AP flour
* 1 teaspoon salt
* 4 teaspoon baking powder (in the show I had some acid in there so I used 1 tsp baking powder and 1 tsp baking soda, but if you don't have acid in there just use 4 tsp baking powder)
* 1 stick of butter (I used a vegan substitute at a 1:1 ratio in this show)
* 1 cup Milk (I used almond milk and oat milk in the clip. You might not need this much milk, sorry I didn't measure!!!)
Set oven at 450°F. Mix dry ingredients. Cut butter into flour mixture until consistency similar to corn meal. Add liquid. Mix until incorporated.
Use a spoon or roll out and cut biscuits. Bake in oven until golden brown (8-12 minutes). Be sure not to overcook.

This is a perfect meal that takes us back to our Palestinian roots using our common pantry staples. Flour, brown lentils, onions and last but not least Olive oil.
We are going to start with doing the noodle (rkak) part.
Rkak:
⁃ 3 c flour
⁃ 1 1/2 c water
⁃ 1/2 tsp salt
Knead together until fully mixed well.
Set aside for about twenty mins.
Separate into 7 dough balls.
Flour your surface well and have plenty of flour on the side.
Using a roller smooth out the dough balls one at a time.
Flour the flattened dough, sprinkle with more flour, fold in both edges, sprinkle more flour, and fold in half again.
Once all are done, take a knife and cut into 1 cm ribbons like in the video.
Sprinkle more flour on them and toss so they don’t stick.
Now for the lentil soup part:
⁃ 2 c brown lentils
⁃ 10 c water
⁃ 1 tbs salt
⁃ 1 tbs cumin
⁃ 1 tsp black pepper
Bring to a boil covered, and set aside until ready to use.
The onions:
⁃ 3 red onions diced
⁃ 1/2 c Olive Oil
In a skillet sauté until slightly golden
Now we bring this all together, bring the lentil soup back to a boil.
Drop in the noodles, stirring so they don’t stick.
Let them come to a boil.
Now add in the sautéed onions. Save a little on the side for garnish.
Serve into soup bowls, too w the onions, and a final drizzle of olive oil. You can serve lemon on the side as well.
