How To make Zucchini Squash Burgers
5 Zucchini (or any other
-variety of summer squash) 2 tb Oil
4 Garlic cloves
4 lg Onions, diced
2 Carrots, diced
1 Green pepper, diced
5 tb Tahini or peanut butter
3 tb Tamari
1/2 ts Paprika
1/2 ts Oregano
1/2 ts Basil
1/2 ts Sea salt
1/8 ts Red pepper (optional)
1/2 c Sesame seeds
1/2 c Sunflower seed meal
1 c Corn meal, or flour, or soy
-powder
Slice the zucchini and place in a large pot with 1/2 cup water, adding enough squash to fill the pot. Steam over medium heat for 7 minutes, until soft. Heat the oil in a large skillet over medium heat; add the garlic, onions, carrots, celery, and pepper; saute for 7 minutes, till vegetables are tender. Drain the zucchini and mash well. Add the sauteed vegetables, tahini, seasonings, sesame seeds, sunflower seed meal, and corn meal. The batter should be thick not wet--add flour if needed. Preheat oven to 375. Oil a cookie sheet. Using a tablespoon, make patties and place them on the sheet. Bake for 8 minutes on each side, until golden brown.

I present Butternut Squash Burger Recipe. It's meatless, healthy, vegan & vegetarian and prepared with thanksgiving leftovers - cranberry sauce and butternut squash serving as vegan patties. This eliminates the need for processed vegan patties, products or substitutes that many times have long list of shady ingredients and very often are based on wheat flour, rice flour, soy protein or sometimes pure isolated gluten. You would be surprised how often those vegetarian patties contains almost no vegetables in them. You never thought that some slice of pure vegetable (well technically a fruit...) could substitute meat or a patty? Stay tuned - The Food Nut got you covered with this recipe!
Addition of the fresh produce to your diet and substituting red meat with a plant based ingredients will not only benefit your health but also will make you feel better. There are millions of recipes for meatless veggie hamburgers (even if this expression seems counterintuitive and unlogical...). The most popular vegan patties are made with black beans. I got really tired recently of black beans and I decided to be more creative. I was craving for something new in my sandwich but at the same time I wanted to keep it healthy and tasty. I came to my little kitchen and check my pantry. And it HIT me hard (the idea I mean!)! Why not make this burger with butternut squash? Preparation for this recipe is very easy and simple. You will need to bake nice piece (slice) of butternut squash. And BOOM! It's ready. No need for mixing lots of ingredients when you want to make a really fast meal. No complicated techniques, methods or process. Just cut nice piece of butternut squash that should be of a regular patty size. Oil it, salt for the taste and add spices such as black pepper and chipotle. Bake at 400 F/ 205 C for 25 minutes in the oven or toaster oven on toast program/mode for about 30 min. It is ready when the squash is soft. You can check with a fork to see if it is tender already or if it needs more baking. This is vegan recipe so I don't use here any type of dressing or mayo that contains animal products. Guess what?! Butternut squash goes perfectly with cranberry sauce. So why to use and regular type of sandwich dressing when you can substitute it with a healthier version. Yep - you can use the same sauce you ate on Thanksgiving or you can use my easy cranberry sauce recipe.

I also added lettuce, tomato and red onion. There is no need for any cheese as this burger is so rich in taste. To have a real feast (let's be real - I meant a PIGOUT! :)) you can serve this burger with my sweet potato fries.

As you can see this is a new technique of burger making. If you prefer different vegetables in your sandwich then go for it. Cooking and tasting should serve you. Remember to toast you burger bun as it will give it an extra crunch. Oil burger buns so they will not become dry. I'm very happy that I could share this recipe with you.

Summer Sides: Flavorful Squash & Zucchini
This is one of my go to summer side dishes when I need something quick, easy and flavorful!
I just love this colorful trio of yellow summer squash, green zucchini and red Roma tomatoes.
The parmesan cheese and Italians seasoning really add a nice flavorful kick!

Scrumptious Squash Patties
Perfect for a unique side dish or a crowd pleasing appetizer. Serve with your favorite dipping sauce and watch them disappear! Here is the recipe:
Ingredients
• 2 packed cups grated yellow squash and/or zucchini – I used a cheese grater.
• 1 green onion, finely chopped
• 3 tablespoons aquafaba from a can of chickpeas
• juice of 1/2 a fresh lemon or lime
• 2 tablespoons vegan mayo
• 3/4 cup cornmeal
• 1 pinch each of paprika, ground mustard, nutmeg, pepper
• 1 teaspoon dried basil
• 1/2 teaspoon dried oregano
• 1 teaspoon onion powder
• 1/2 teaspoon garlic powder
• 1/2 teaspoon salt
• 2 tablespoons grapeseed oil
Steps
1. Combine all of the ingredients, except for the grapeseed oil, in a large bowl. Stir well to combine; the dough will probably seem runnier than it ought to, but it should be pretty messy at this point. Transfer the dough to the refrigerator to chill for at least 30-45 minutes.
2. Shape the mixture into 6-8 small patties. Fry on medium high heat until they’re crispy on both sides, just 2-3 minutes per side.
Notes: Optional step is to dredge the patties in flour before cooking.
Optional: make smaller patties to serve as finger food appetizer. Serve with your favorite vegan dipping sauce such as vegan mayo with herbs, vegan garlic aioli, applesauce, etc.
