How To make Zucchini Corn Cakes

Directions:
In a large bowl, stir together cornmeal, flour, soda cumin, salt and pepper. Using large holes on a shredder, shred zucchini to make 3/4 cup (packed). Squeeze with your hands to extract excess moisture. In a medium-size bowl, mix egg, buttermilk, oil, zucchini, corn and green onion. Pour liquid into dry ingredients and stir until evenly moistened. Heat a large skillet or griddle over medium-high heat. Grease lightly with butter. Spoon about 2 tablespoons batter onto skillet for each cake, spreading batter to make 3 inch cakes. Cook until tiny bubbles form in the centers and edges of cakes appear dry; turn and cook other sides until browned and cakes puff slightly.
Serve 2 or 3 cakes per person. Top each serving with sour cream as desired.

CORN AND ZUCCHINI FRITTERS | Easy Courgette (ZUCCHINI) and Sweet Corn Fritters with DILL YOGURT DIP
In this video, we show you how to make Corn and Zucchini Fritters with an easy Dill Yogurt Dip. Zucchini, which is also known as Courgette, goes really well with Sweet Corn, and these fritters are an absolutely delicious combination of the two ingredients. These Corn and Zucchini Fritters are incredibly delicious with the addition of fresh Dill leaves and Feta cheese, and the garlic Dill yogurt dip elevates these fritters to another level!
To make the Sweet Corn and Zucchini (courgettes) Fritters, you will need:
1 Large Zucchini (courgette) grated
Salt to taste
1 cup Sweet Corn (we cut the corn kernels from 1 whole corn cob, but you can also use frozen or tinned sweet corn)
3/4 cup fresh dill
1/2 cup spring onions
1 tsp dried oregano
1 tsp dried basil
1/2 tsp chili flakes (or to taste)
1/2 tsp garlic powder
1/2 tsp black pepper
3/4 cup Feta Cheese (you can use cheddar or mozzarella instead if you wish)
2 eggs
2 tbs cornflour
1/2 cup All-Purpose Flour
salt to taste
oil for shallow frying
For the Dill Yogurt Dip Recipe, you will need:
5-6 TBS Greek Yogurt
1/2 clove garlic
1/2 cup fresh dill
salt to taste
black pepper to taste
1-2 tbs lime juice
These Sweet Corn and Zucchini Fritters are absolutely delicious and so easy to make. We highly recommend you make the Dill Yogurt Dip with these too as they go perfectly well together. These Corn and Courgette Fritters are absolutely perfect for lunch on the go or picnics too!
