How To make West: Mixed Vegetables Jaipur Style (Sabji Jaipuri)
Stephen Ceideburg 1 ts Cumin seeds
1 ts Coriander seeds
1 tb Mild vegetable oil
1 md Onion, sliced
2 tb Tomato paste
10 Whole cashew nuts
1 c Half-and-half
1 tb Ghee
5 Whole cloves
5 Cardamom pods
1 One-inch piece cinnamon
-stick 1 md Tomato, peeled, chopped
1/2 c Cauliflower florets
1/2 c Broccoli florets
5 Brussels sprouts, cut in
-half 1 md Carrot, cut into 2-inch
-sticks 1/2 c Diagonally cut green beans
1/2 c Water
1/2 ts Cayenne pepper
1/2 ts Salt, or to taste
1/4 c Raisins
Fresh mint sprigs for -garnish This makes a delicious and colorful vegetarian entree. Combine cumin and coriander in a small skillet and dry-roast over medium heat for 6 to 8 minutes. Remove and set aside. Heat oil in the same pan, add onion and stir-fry until brown, combine cumin-coriander, fried onion, tomato paste, nuts and half of the half-and-half. Blend into smooth past and set aside. Heat ghee in a heavy 2-quart saucepan over medium-high heat Add cloves, cardamom and cinnamon, stir until fragrant. Add tomatoes and cook until soft. Add remaining vegetables and stir-fry for 5 minutes. Stir in ground paste, remaining half-and-half, the water, cayenne, salt and raisins. Cover cook over medium heat until vegetables are tender. Garnish with mint sprigs and serve. PER SERVING: 150 calories, 3 g protein, 14 g carbohydrate, 70 g fat (5 g saturated) 21 mg cholesterol, 210 mg sodium, 3 g fiber. MALAI KOFTA RECIPE ❤️
Ingredients:
- 1 tsp Oil
- 1 tbsp Ghee
- 2 Elaichi
- 2 Bay Leaf
- 1 tsp Cumin
- 2 medium Onions
- 1 tsp each Ginger and Garlic
- 2pc Green Chilli
- 1 tsp Haldi Powder
- 1 tbsp Coriander Powder
- 1 tbsp Kashmiri Chilli Powder
- 1 tsp Red Chilli Powder
- 2 Tomatoes
- 1 tsp Melon Seeds
- 6pc Cashew
- Salt to taste
- Boiled Potato
- Paneer
- 1 tsp each Garam Masala & Kasuri Methi
- Maida and Corn Starch
- 1 tsp Butter
- 1 tbsp Cream
Recipe:
1. To a kadai, add oil, ghee, whole spices, onions, ginger, garlic and green chilli. Cook till translucent.
2. Add the spices along with some water and let it cook.
3. Add tomatoes, melon seeds, cashew, salt and water. Let it cook properly, let it cool down and then blend it.
4. For the kofta, mix together boiled potato, paneer, ginger, garlic, green chilli, spices, maida and corn starch.
5. Form small balls with it, coat in corn starch or maida and fry them in oil.
6. Take a kadai, add some butter, kashmiri chilli powder, blended gravy, cream and some water to adjust the consistency.
7. Serve the gravy with the kofta and enjoy!

Half cup toordal(Pigeon pea)
2 Tblsps moong dal(Petite yellow lentils)
2 Tblsps masoordal(Red lentils)
1 Tsp finely chopped ginger
1/2 tsp finely chopped garlic
1 or 2 green chillies
1 t sp salt
1/4 t sp asafoetida (hing)
1/4 t sp turmeric powder
3 cup water
1 tea spoon oil
For making dal
1 tab sp oil
1 tab sp ghee
1 medium size onion finely chopped
1 finely chopped ginger
1/2 tea spoon finely chopped garlic
1 medium tomato
1/4 tsp Haldi powder
1/2 tsp Kashmiri red chilly powder
1/2 tsp Kithchen king masala
1 t sp salt
1/4 cup water
2 tblsps finely chopped coriander leaves (Dhaniya)
For tadka
1 tblsp oil
2 tsp jeera(Cumin seeds)
3 whole dry Kashmiri red chilly
1 tsp finely chopped garlic
1 pinch asafoetida (hing)
1 tblsp butter
1/2 t sp Kashmiri red chilly powder
Jeera rise:-
2 cup Basmati rise
8 cup water
3 Bay leaves (Tej patta)
1 black cardamom (Kali Elaichi)
4 green cardamom (Elaichi)
3 to 4 cloves ( Lavang)
2 stick Cinnamon (Dalchini)
1 Tsp salt
2 tsp oil
1 tblsp white vinegar
2 tblsps oil
1 tblsp ghee
1 tblsp Jeera(Cumin seeds)
1/2 cup coriander leaves (Dhania)
