Thanks for checking out this incredibly easy and versatile recipe for vegetable soup. My version is vegetarian, but it would be very easy to make the recipe as I did, but add a little chuck roast and/or beef broth, if you prefer a meatier version. In fact, I’ve made it like that before and it was delightful!
Feel free to omit anything you don’t like and add any other vegetables you prefer. The herbs and spices can also be adjusted to accommodate your family’s preferences. Enjoy!
INGREDIENTS
Here’s what I used:
64 oz. V8 Juice (original)
1 large russet potato, diced
1 medium yellow onion, diced
2 ribs celery, diced
32 oz. frozen mixed vegetables (mine included carrots, peas, green beans, and corn)
1 tsp ground black pepper
1/2 tsp salt (not shown)
2 tsp garlic powder
1 bay leaf
1 sprig fresh thyme
4 oz. alphabet pasta, pre-cooked (al dente)
Add all ingredients to slow-cooker set to HIGH and go do other things for about four hours. When you come back, you’ll be glad there’s a whole gallon of hot soup waiting for you!

RECIPE:
INGREDIENTS:
2 lbs. ground beef
1 small sweet yellow onion
1 tsp. salt
½ tsp. pepper
2 tsp. Italian seasoning
1 tsp. onion powder
1 tsp. garlic powder
20 oz. mixed vegetables (two 10-oz. packages) I use Green Giant brand with carrots, corn, peas, and green beans.
38 oz. Progresso tomato basil soup (two 19-oz. cans)
1 cup water
SLOW COOKER SIZE:
INSTRUCTIONS:
To a large skillet on the stove top, add the ground beef. Add the onion, salt, pepper, onion powder, garlic powder and salt and pepper. Crumble and brown. Drain off the fat if your meat is greasy.
Add the beef and onion to the slow cooker. Add the bags of frozen vegetables.
Pour in the tomato basil soup and water. Stir.
Cook on HIGH For 3-4 hours or LOW for 5-6 hours.
Serve with french bread, garlic bread or dinner rolls. Enjoy!

3 cups of diced up red Potatoes
4-7 tbs of butter (Melted)
1 packet of Lipton
Step By Step
First take your Crock Pot liner and put in on the bottom of your Crock Pot for easy clean up! Next take your chicken, Green Beans, Red Potatoes and mix them all together. Finally pour the melted butter on top and add your pack of Lipton and mix it all together. Cook for 4-6 hours or 6-8 Hours on low. Now ENJOY!

2 handfuls of fingerling potatoes, halved if too large
1 white onion, cut into 1 inch chunks
2 stalks of celery, sliced into 1 inch pieces
1 tb Worcestershire sauce
1 tsp paprika
½ tsp thyme
½ tsp oregano
1 bay leaf
3 cloves garlic, chopped
salt and pepper to taste
