Easy Almond Crescent Cookies ???? #delicious
A must make melt in your mouth cookie. ????
These almond crescent cookies are buttery and nutty! They are the perfect bite for a tea party. ????????????
You'll need
2/3 cup ground almonds
150 g butter
1/2 cup granulated sugar
1 egg yolk
2 tsp vanilla sugar
2 1/8 cups flour
To coat;
2/3 cup powdered sugar
1 cup = 200 ml
Here’s how
Firstly, process the almonds in a food processor. You can adjust the amount of almonds according to your preference.
Take room temperature butter, powdered sugar, egg yolk, and vanilla sugar in a suitable mixing bowl. Mix the ingredients using a spatula.
Once the ingredients are well combined, add the flour and the processed almonds to the mixture, and continue to stir.
Shape the dough into a soft, non-sticky consistency. Wrap it in plastic wrap and let it rest in the refrigerator for about 15-20 minutes.
After the resting time, take the dough out of the fridge. Shape the dough into crescent shapes with your hands. With these measurements, we obtained 32 almond crescent cookies.
Place the shaped cookies on a baking sheet. Bake in a preheated oven at 160°C (320°F) for 20 minutes.
After removing the cookies from the oven, let them cool slightly, then roll them in powdered sugar. Serve and enjoy!

---------------------------------- RECIPE ------------------------------------
Ingredients
* 1 1/3 cup (120g) almond flour (‼️NOT PACKED‼️)
* 2 tablespoons (30 ml) maple syrup
* 2 tablespoons (30 ml) coconut oil, melted
* Pinch of salt
NOTE:
1. Please, use the Digital kitchen scale fo the best results!
2. Instead of maple syrup take 2 tbsp sugar/low-carb sugar and 1 tbsp water.
3. Instead of coconut oil take Ghee or yellow part of melted butter. Vegetable oil don't work in this recipe.
4. Don't let the dough chill too long. Coconut oil will solid at room temperature and the dough will be crumbly and will not come together.
5. Don't pack down almond flour!
Instructions
1. Preheat oven to 350F (175C). Line a baking sheet with parchment paper.
2. In a medium bowl, combine all of the ingredients, stirring to combine (be sure to break up any lumps in the flour and/or sugar).
3. Shape dough into about 16 balls. Space balls 2 inches apart on prepared baking sheet. Flatten halfway (e.g., with a fork, cookie stamp, the flat bottom of a measuring cup, or fingertips)
4. Bake in a preheated 350F oven for 12 to 15 minutes until the edges are golden brown and the centers no longer look wet. The cookies will still seem somewhat soft, but that is due to the high amount of fat (almond flour + coconut oil). They will become firm once completely cooled.
5. Remove from oven and cool on sheet for 10 minutes. Transfer to a wire cooling rack and cool completely.
Storage: The cookies are best stored in the refrigerator, in an airtight container, for up to 2 weeks (or the freezer for up to 6 months).
ENJOY!

Whether you're hosting a party or just looking for a tasty treat to enjoy with your afternoon coffee, these vanilla almond cookies are sure to be a hit.
To print the recipe and directions:
Ingredients:
1 cup unsalted butter room temperature (8 ounces) (226 gr)
1/2 cup granulated sugar (100 gr)
2 tsp pure vanilla
3 egg yolks
1 cup almond flour/meal (125 gr)
2 cups all purpose flour (280 gr)
1/2 tsp baking powder
1/4 tsp salt
1 cup confectioners sugar (10X sugar)
Directions:
Step#1- Using a stand up mixer or handheld mixer cream the butter with the sugar until light and fluffy. Usually about 4 minutes. Add vanilla and egg yolks one at a time. Let it get absorbed before adding next one. Lower speed and add almond flour. Continue mixing.
Step#2- Combine flour, baking powder and salt.
Step#3- Sift into mixture and mix until dough forms. If you’re using handheld mixer you can do this last part by using a spatula. Once dough is formed cover with plastic wrap and chill in refrigerator for at least one hour.
(This dough can be made ahead and also frozen).
Step#4- Use a one tablespoon size ice cream scooper to scoop each cookie. Roll between your hand as if you were rolling to make meatball round and round. Then move your hands front to back creating a roll. Fold the tips forward making a crescent.
Step#5- On a parchment paper lined cookie sheet space each cookies about 1 1/2 inches apart. Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 10 minutes or until tips are golden.
(Don’t overcook).
Step#6- Let them cook about 10 minutes before coating in confectioners sugar.
Step#7- Coat each cookie and finish cooling on rack.
(Dust more confectioners sugar before serving).
Enjoy and remember to share. Food is indeed love.

RECIPE PLAYLIST =
[ ❅ VANILLA ALMOND SNOWMEN ❅ ]
1 cup soaked dates*
1 tsp vanilla extract
1/2 tsp cinnamon (optional)
1/3 cup almond meal
1/3 cup oats, ground into flour
1 tbsp chia seeds
½ cup + dessicated coconut, to roll the balls in
Optional Snowmen toppings: cacao nibs (or mini chocolate chips), goji berries, pretzels
------
1. Unless you dates are super soft, pit them and soak in warm water for ~10 min. Drain
2. Combine the dates, vanilla extract, and cinnamon into a food processor and blend to make an even paste
3. Add the almond meal, chia seeds, and oat flour and pulse until combined
4. Roll into balls (I used a 1/2 tbsp to make them small, for normal size I would use 1 tbsp) and then roll in coconut until evenly coated
5. To make a snowman, connect 3 balls using a toothpick, then use 2 cacao nibs for eyes, a goji berry for a nose, and some pretzels for arms (or whatever else you have laying around!)
6. Store in the fridge for up to 1 week
*If you don’t have dates, you can really use any dried fruit you have on hand, but keep in mind this will alter the overall taste of the balls
