Today I am going to show you how to make my version of Gluten Free Vanilla Wafer cookies!
This recipe really is easy to make, the longest part is the bake time! In the video, I am making a double batch, below you can find the recipe for a single batch of these cookies.
If you don't have a cookie scoop, this dough can be piped into circles. I found the best size is about a teaspoon size amount of dough.
* If you make this recipe without using eggs, you may need to add some milk or other liquid to get the right consistency of the cookie dough.
*I don't have an equivalent of white sugar or powdered sugar to give you. When I convert recipes to using honey, I usually cut the sugar in half, so that is a starting point. Also if you use powdered sugar, you may need to use less cornstarch.

For the Vanilla Wafer cookies:
1 1/2 cups GF Flour
1/2 cup Cornstarch
3/4 tsp Baking Powder
1/2 tsp Salt
1/2 cup Butter {113 grams}
1/3 cup Honey
2 Eggs
1 Tbsp Vanilla
Oven 325 F. Parchment lined cookie sheets. Bake for about 20 minutes, or until the edges and bottoms are golden.

Vanilla wafers are under-appreciated — not only are they a classic cookie, but the rich, buttery cookie that’s just bursting with yummy vanilla also goes with so many desserts! You can’t have my Creamy Banana Pudding without a crisp nilla wafer, or my 15 Minute Banana Cream Pie (No Bake). And, you can also use nilla wafers in my Homemade Strawberry Shortcake Bars! Honestly, for such a simple cookie, the sky’s the limit, so think out of the box (the prepackaged cookie box, specifically).
Homemade vanilla wafers are super easy to make, and they’re so much more flavorful than the kind you can pick up at the store. This nilla wafer recipe also earns bonus points because the cookies keep really well, so you can make them in advance for any of your nilla needs.

This homemade vanilla cookie recipe is a great alternative to the store-bought version. It provides the traditional vanilla, buttery, crunchy cookie you expect in a Vanilla (Nilla) Wafer. Use these cookies in homemade banana pudding or crumble and mix with melted butter to use as a dessert pie crust for banana cream pie, cheesecake, etc. Dip them in chocolate sauce, sweetened cream dip, caramel sauce, or dulce de leche, or crumble over ice cream. Yum!
