How To make Tropical Cheese Bars
CRUST:
3/4 c Margarine
3/4 c Brown sugar
3 c Flour
1 c Almonds; finely chopped
1/4 c Coconut Rum
CHEESE LAYER:
24 oz Cream cheese; softened
1/2 c Sugar
1/4 c Coconut Rum
2 cn Crushed pineapple; drain,
-large cans 1 c Coconut
1 c Almonds; chopped
3 ea Eggs
Cream margarine, sugar and coconut rum, beat in flour until blended. Stir in nuts. Pat into 10x15" pan. Bake at 350~ for 10 minutes. Cool. CHEESE LAYER: Beat cheese, sugar, eggs and coconut rum until creamy. Stir in pineapple. Pour on baked crust. Mix nuts and coconut. Sprinkle over all. Bake at 350~ for 20 minutes. Cool. Cut into bars.

The closest I ever came to a tropical get-a-way during my youth was the traditional family picnic. But, all of the women in the family knew how to bring-on the traditional tropical flavors for our reunions with the cool and refreshing flavors of lemon and pineapple. Those memories translated to my ambitious use of those flavors for my family gatherings now that I'm an adult, but bringing new twists to old classics. So, I've taken what was called a salad and bumped it up to dessert status by using both regular and pineapple PHILADELPHIA Cream Cheese. Don't tell anyone, but I know they will enjoy this even more as a Philly-fied dessert!

1 1/2 cup graham wafer crumbs
1/3 cup melted butter or margarine
1 cup banana chips broken into small pieces
1 cup white chocolate chips
3/4 cup toasted coconut chips or toasted shredded coconut
1/2 cup chopped dried papaya
1/2 cup chopped dried pineapple
1/2 cup chopped salted macadamia nuts
1 can (10oz-300ml) sweetened condensed milk
In a bowl, combine the graham crumbs and the melted butter or margarine.
Press this into the bottom of a greased (or foil lined greased) baking dish (8x8 or 8x10)
Sprinkle on the banana chips, papaya, pineapple, white chocolate chips, coconut and macadamia nuts. Spread topping evenly over the crust.
Drizzle the can of sweetened condensed milk over the toppings. Take a spoon or knife and move the milk into cracks between toppings.
Bake at 350F for 30-40 minutes until center is set and bars are golden brown all over.
Allow to cool 30 minutes and cut into bars.

Tropical Granola Bars
Easy to follow recipe for children and adults. Step by step method given.
Ingredients:
50g butter or margarine
2 x 15ml spoon honey
100g sugar
150g jumbo oats
1 x 5g spoon cinnamon
40g pumpkin seeds (or similar - I used 20g chia seeds)
40g dedicates coconut (I used ground almonds as an alternative)
75g dried tropical fruit
Preheat oven to gas mark 4 / 180 degrees Celsius
