Tostada Recipe
Ingredients:
1 half of lettuce sliced
Pico de Gallo (Half of purple onion chopped, ½ Cup of Cilantro Chopped, and 2 Roma tomatoes cut into chunks)
Sour cream for topping
1 Avocado (sliced)
3 Cheese Mexican Blend
Squeeze of lime juice for topping
Your favorite salsa
Black Olives sliced
1 bag of your favorite tortilla chips
1 ½ pound of Ground Beef
3 cups of cooked Pinto Beans smashed
1 tbsp of Chili powder
1 tbsp of Dried Oregano
1 tsp of Ground Cumin
2 large garlic cloves chopped
Salt and Pepper to taste
Prep all your ingredients.
In one skillet, heat up your pinto beans. Once heated smash the beans and allow the juices to evaporate to where you have creamy beans.
In another skillet, crumble your ground into some Olive Oil. Add your garlic, salt, pepper, chili powder, dried oregano, and cumin. Cook for 7-8 mins and break up the meat as it cooks. Then remove enough fat juices from the skillet. Leave a little for flavor.
Use your favorite tostada shells and layer some beans, ground beef, avocado slices, lettuce, sour cream, cheese, pico de gallo, salsa and squeeze of lemon.
Ready to serve

Easy Crockpot Mexican Shredded Beef
Flavor-packed, tender, fall-apart, Mexican-style Shredded beef! Super easy, made with just a chuck roast, and a few pantry staples.

This beef is so versatile...it can be used in tacos, burritos, quesadillas, taquitos, and more!
No need to brown the roast first...although, you definitely can for an added depth of flavor! But, we skip this step...and it comes out full of flavor!
The video shows how to make it in the Crock pot slow-cooker, but it can also be made in the Instant Pot or Stove-top (instructions on food blog).

BETH'S S'MORE PIE RECIPE
Serves 8
Ingredients:
For the Crust:
2 cups of finely ground graham crackers (about 15-16 graham crackers)
6 tbsp melted butter
1/8 tsp salt
For the Filling
¾ cup of semi-sweet chocolate chips
¾ cup of milk chocolate chips
¼ cup of butter
2 whole eggs
1 egg yolk
1 cup heavy cream
1 tsp vanilla
For the topping:
2 egg whites
1 cup of corn syrup*
pinch of salt
½ tsp vanilla
¼ tsp cream of tartar
2 tbsp sugar
*IF YOU CAN'T FIND CORN SYRUP, HERE'S A RECIPE FOR MAKING YOUR OWN!
Method:
Preheat oven to 350.
Grind graham crackers in a food processor. Or place them in a zip lock bag, and whack them with a rolling pin, until they are crushed into a fine crumb.
Place graham cracker crumbs into a bowl, add the salt and the melted butter. Combine with a fork until the crumbs stick together.
Place the crumbs in a 9 ½ pie plate working the crumbs up the side of the pan, with the palm of your hand. Set aside.
Place both chocolate chips and butter in a heat safe bowl. Heat the heavy cream in a sauce pan until it simmers, pour it over the chocolate chips and whisk until melted and combined. Add whole eggs, and yolks and mix until combined. Add vanilla.
Pour chocolate mixture into piecrust and bake 15-20 mins until pie is set and a toothpick comes out clean.
Meanwhile, place 2 egg whites, corn syrup, salt, vanilla and cream of tartar in a bowl and whip on high until stiff peaks form and mixture is glossy. Slowly add sugar.
Allow pie to cool, and then add marshmallow topping on top, creating decorative swirls as you go with a spatula.
At this point, if you are not serving right away, the pie can be refrigerated until ready to serve. Then proceed with last step of broiling.
Place pie under the broiler for 1-2 mins until marshmallow topping turns golden brown.
BE CAREFUL! Marshmallow burns quickly so please keep an eye on it while broiling, do not walk away!

Mexican Pizza Ingredients:
10 Flour Tortillas, Poked & then fried or baked
For the Taco Enchilada Sauce:
1 tsp oil
1/2 cup Onion, roughly cut
4 to 6 cloves of Garlic
1 big Tomato
4 to 6 giant mild chilies, dried
1/2 tsp Cumin seeds
Salt to taste
FOR THE REFRIED BEANS: (Instant Pot makes it easier to boil beans)
1/2 cup dry pinto beans, boiled & mashed
1 tsp oil
1 tsp garlic, minced
1/2 tsp cumin powder
1/2 tsp paprika powder
salt to taste
For assembling the pizza:
1 cup cheese or as needed
1/2 cup tomatoes, finely chopped
1/2 cup spring onion, finely chopped
