——Ingredients——
1 pound of cheese tortellini
1 cup of pesto
1 Qt cherry tomatoes
8oz of Pearl mozzarella
Mixed greens (baby spinach and baby arugula)
The juice of half a lemon
1/2 teaspoon flake salt
:
1. Boil the tortellini in salted water for about 4 to 5 minutes or according to the package, Then strain.
2. Put the cooked tortellini in a large bowl then add the pesto, the cherry tomatoes(cut in half) the pearl mozzarella and toss everything together really well.
3. Grab a large salad bowl, add in your favorite mixed greens I love baby spinach and baby arugula. Drizzle the juice of half a lemon on the greens and sprinkle with some flaky salt and mix a little bit. Then add the tortellini mixture on top and enjoy a delicious pesto tortellini salad.

Ingredients:
3 cups dried cheese tortellini (about 1 lb)
2 ears corn
1 pint heirloom cherry tomatoes, quartered
8oz mozzarella pearls
5 oz baby arugula
3-4 tablespoons pesto sauce
4 tablespoons red wine vinegar

pesto tortellini pasta salad. we’re trying to celebrate sundried tomatoes because they deserve a moment. they are the quiet star of this pesto tortellini pasta salad.
here’s the recipe:
2 cups basil leaves
1/4 cup toasted pine nuts
1/3 cup grated parmesan, plus more for topping
1 garlic clove, peeled
1/3 cup olive oil
1/2 teaspoon kosher salt
1 pound tortellini pasta
1 teaspoon olive oil
1/4 cup sundried tomatoes, diced
1/4 red onion, thinly sliced
1/2 pound sungold tomatoes, sliced in half
1 cup small mozzarella balls
to make the pesto: add the basil, pine nuts, parmesan, garlic clove, olive oil and salt to a small blender. pulse until smooth. adjust the salt to your liking.
boil up the tortellini per the package’s instructions. mine said about 4 minutes. drain and rinse off so it cools quickly. transfer to the fridge to speed up the cooling process. add the tortellini to a big bowl, along with the mozzarella balls, sundried tomatoes, sungold tomatoes, red onion. add the pesto. toss together, along with a drizzle of olive oil and more parmesan.

Ingredients
1 box farfalle pasta (bow tie)
1/2 cup basil pesto
1 1/2 cups pearl mozzarella
32 cherry tomatoes or 12 oz
Instructions:
1. Bring a pot of water to a boil then generously salt the water and add the Farfalle pasta to the pot. Cook al dente.
2. Once the pasta is done cooking, pour it into a colander and rinse with cold water to stop the pasta from cooking.
3. Now place the pasta into a large bowl and stir in the pesto, pearl mozzarella, and sliced cherry tomatoes. Serve chilled.
