Pro Chef Tries to Recreate Retro Tomato Aspic Recipe From Vintage Cookbook | Then and Now
When you think of gelatin, you may picture sweet jello flavors like strawberry, cherry, or lemon-lime. But you can also use this intriguing ingredient to prepare a savory dish known as an aspic, which is simply a savory take on jello. In this video, chef Alexis deBoschnek tries to recreate a retro Tomato Aspic recipe from a vintage edition of the Better Homes & Gardens New Cook Book. While its ingredients seem to resemble those of a Bloody Mary, the bouncy texture of this dish is totally different from that of the beloved cocktail – or most renditions of tomato for that matter. How does this vintage recipe stand up to our modern-day taste buds?

They were peppered with pimiento-stuffed olives or crisp bits of celery, chilled in ring-shaped molds, turned out onto lettuce-lined trays, and filled with the hostess's signature blend of chicken or shrimp salad.

Welcome to Unboxing Betty! Join Melinda in the kitchen as she cooks her way through Betty Crocker’s 1971 Recipe Card Library. Our first card is for Tangy Tomato Aspic. This savory tomato jello served with shrimp salad, and is the epitome of atomic age cooking. Despite the wild presentation of this vintage recipe, the taste and texture were surprisingly palatable.
