How To make The Bicol Express

dilao (tumeric), fresh

cooked pork sliced into 1/2 inch strips
1 1/2
tablespoon
hot chilli (siling labuyo, chopped)
1 1/2
cup
bagoong alamang
6
cup
coconut cream
2
cup
hot green peppers, fresh (elongated variety), sliced diagonally into 1/4 inch strips
1 1/2
cup
red peppers, fresh (elongated variety), sliced diagonally into 1/4 inch strips
Directions:
Saute garlic in hot oil. Add onions and cook until translucent. Stir in fresh ginger, dilao, and the sliced cooked pork. Stir continually for 5 minutes. Add bagoong alamang and chopped hot chilli (siling labuyo). Stir until the pork is completely covered by the mixture. (about 15 minutes.) Pour in 6 cups of coconut cream and add the sliced hot green and red peppers. Continue cooking for about 20 minutes. Add salt if necessary.
Note: chillis and peppers to be added according to spiciness desired.

Ingredients:
Cooking oil - as needed
1kg green chillies (chopped)
150 g medium onions (diced)
70 g ginger (peeled, chopped)
100 g garlic (smashed hahah, chopped)
1/2 tin Dona Elena Anchovies (chopped)
1 kg ground pork
Fish sauce (Patis) as needed
Shrimp paste (Bagoong) - 4 tbsp or as needed
1 can Jolly Coconut Milk
1 can Jolly Coconut Cream
2 tbsp labuto flakes or 100g fresh labuyo chopped
300g shrimp
Sugar as needed
Ground black pepper as needed
Procedure:
1. Saute garlic for 1 minute then add anchovies, onion and ginger. Saute until lightly browned.
2. Add ground pork and cook until browned and most of the liquid has evaporated. Add patis.
3. Add bagoong ang cook for 3 mins.
4. Add coconut cream and coconut milk. Cook for 5 mins or until lsightly thickened.
5. Add both chillies.
6. Add shrimp.
7. Stir/toss for 4 minutes or until the shrimp is cooked.
8. Adjust seasoning as needed.
9. Serve.
