Tex Mex Ground Beef Skillet | I Heart Recipes
Hey guys! You’ve got to try this easy and delicious Tex Mex Ground Beef Skillet:
This Tex Mex Ground Beef Skillet is a super easy dinner recipe that can be made in under 30 minutes! I used regular ground beef, homemade taco seasoning, frozen corn, black beans, brown rice, a can of Rotel tomatoes and green chiles, green onions, and cheddar cheese. This Tex Mex Ground Beef Skillet is a perfect hearty and flavorful weeknight dinner the whole family will love.

0:10 - Add ground beef to a pan.
0:18 - Brown the meat.
0:22 - Drain the fat.
0:25 - Season the meat.
0:35 - Add corn.
0:42 - Add a can of Ro-Tel.
0:50 - Stir until well combined.
0:56 - Add chopped green onion.
1:01 - Add a can of drained and rinsed beans.
1:08 - Mix well.
1:15 - Add cooked rice.
1:23 - Fold the ingredients together.
1:35 - Cook until heated through.
1:50 - Add more green onions on top.
1:56 - Top with shredded cheese.

Delicious Corn Casserole // Side Dish with Tips Step by Step❤️
When it comes to a side dish, this CORN CASSEROLE is on the top of my list of favorites. This side dish goes beautifully with just about anything, I love it so much that I can eat it all alone, hot, warm or cold. My whole family loves it and it’s one of the first dishes everyone goes to on the buffet table. I always prepare a double batch for thanksgiving and Christmas a d when I need a dish for a potluck, this is one of my favorites to take, and I always give out the recipe a few times, I know it by heart. This corn casserole is so easy to prepare and it’ll never let you down. I hope you give it a try. ❤️

INGREDIENTS _________________
1 stick of salted butter (melted)
1 14.5 oz. Can Creamed Corn
1 15.25 oz. Can whole kernel sweet corn (drained)
1 large egg
1 C. Sour cream
1/4 C. Chopped green onions (white n green parts)
1/2 tsp. Sugar
Pepper as needed (optional)
1 8.5 oz. Box Jiffy corn muffin mix
Non stick spray
TOPPER_________________________
Chopped green onions (as needed)
Freshly grated cheese of your choice as needed (i used mixed Sharp cheddar and Monterrey jack)
TIPS__________________________
1. You can double this recipe, if you do, add 2-4 eggs (I use 3)
2. You can replace Sour cream with Greek yogurt or Mayonnaise (you decide)
3. You can use fresh, frozen (thawed) or canned corn
4. Use an 8x8 dish or 9x13 if doubling the recipe)
5. For heat you can use finely chopped seedless jalapeño or can pickled jalapeño (drained)
6. You can add finely chopped bell pepper (green, red,orange or yellow)
7. Bake till no longer jiggly In the center
8. Bake single recipe for approximately 45 minutes
Double recipe needs to be checked at 45 minutes and baked Longer if necessary til no longer jiggly in the center
9. Using a metal pan make take less Time than glass
10. ALL THESE TIPS ARE SUGGESTED, but you decide if you want to follow these tips or not, the decision is yours.

✨ Corn Spinach Enciladas ✨
Enchiladas sound so intimidating to cook but this recipe will change your mind. These spinach, corn cheese enchiladas are creamy, cheese and the perfect veggie delight!
Recipe:
For the corn mushroom spinach filling:
- 2 tbsp oil
- 6 cloves Garlic , finely chopped
- 2 cups mushrooms, sliced
- 500 grams Spinach, chopped
- 1 cup paneer, grated
- 1 cup boiled corn
- Salt , to taste
- 1 tbsp chilli flakes
- 1 tbsp oregano
For the tomato sauce :
- 1 tbsp oil
- 4 cloves garlic, finely chopped
- 2 cups homemade tomato purée
- 1 tsp sugar
- 1 tbsp oregano
- 1 tbsp chilli flakes
- 2 tsp taco seasoning
- Salt , to taste
3 tortillas
Mozzarella cheese
Sliced enchiladas
???? Once your enchiladas are out of the oven, sprinkle it with toppings to brighten things up and balance the flavors.
???? Don't drown your enchiladas in sauce, this sometimes causes them to break and fall apart. Add a generous amount of sauce but not an excessive amount.

Ingredients
To Make Tortilla
Maida/all Purpose Flour - 2 Cups
Salt - 1 Tsp
Baking Powder - 1/2 Tsp
Oil - 5 Tbsp
Hot Water
To Make Veg Filling
Cooked Sweet Corn - 1 Cup
Onion - 1 No. Finely Chopped
Green Capsicum Finely Chopped
Red Capsicum Finely Chopped
Green Chilli - 1 No. Finely Chopped
Chopped Coriander Leaves
Salt - 1/4 Tsp
Pepper - 1/4 Tsp
Mixed Herbs - 1/4 Tsp
To Make Quesadilla
Oil
Tortilla
Grated Cheese
Veg Filling
Salsa
Method:
1. Mix maida, salt, baking powder in a bowl.
2. Add oil and mix again. Pour some hot water gradually and prepare the dough. Knead it for 3 mins.
3. Cover and let the dough rest for 2 hours in room temperature.
4. Divide the dough into equal size balls and keep them aside.
5. Dust the rolling surface with some flour and roll each dough ball fine and thin.
6. Heat a tawa and cook the tortillas on medium flame for 40 seconds on each side.
7. Wrap the prepared tortillas in a cloth to make sure they are soft.
8. To a large bowl, add sweetcorn, onions, green capsicum, red capsicum, green chili, chopped coriander, salt, pepper, mixed herbs and mix well. Keep this aside.
9. Grease a pan with some oil and let it heat on medium low.
10. Place the tortilla on it and put some cheese, vegetable filling and salsa on one side.
11. Close it all with the other half of tortilla.
12. Gently press and make sure the filled tortillas are cooked on both sides.
13. Yummy Quesadillas are ready to be served.
