EGGLESS SCONES with jam and cream | Tea Time Treat
These easy to make, flaky, and buttery Eggless Scones with jam and cream are sure to become a family favourite treat. Perfect with a cup of coffee or tea!
INGREDIENTS:
1 cup all-purpose flour
1/8 cup castor sugar
1/2 tbsp baking powder
75 g salted butter, cold and diced
90 ml fresh cream plus more for brushing
1 teaspoon vanilla extract
Bake in a pre heated 180 degree oven 20-25 minutes or till golden brown .
To serve-
Strawberry Jam
Whipped cream

Makes about 12 Scones
Recipe Ingredients:
White medium strength Flour 340 grams
Baking powder 18 grams
Salt 2 gram
Sugar 57 grams
Butter 14 grams
White Shortening 43 grams
Egg 75 ml
Milk 156 ml
Method:
1. Add into bowl flour, baking powder, salt and all the fat
2 Now add into a 2nd bowl milk, eggs & sugar
3 Now whisk to dissolve the sugar
4. Now to lightly crumb up the fat with flour
5. Now put on to mixer
6. Now mix on 1st speed for 1 min
7. Now add in the liquid over 1 min
8. Now need the scrape down
9. Now mix for a further 2 min on 1st speed
10. Now ready to put onto table
11. Now cut into 2 parts & mould up lightly, roll out with pin to about 18mm thick, for cutting out with a round cutter size 63mm or 2½ in,
12. Now for tray up and wash tops with egg wash, some can go into the freezer if you want,
13. Now rest for around 15-20 min, then wash with egg again ,
14. Now for baking the scone for 12 – 15 min at 210c must have a solid heat

British Afternoon Tea, Scones, Sandwiches, Tea Time, lavender scones
Accompanies Christian on his hike through English-looking landscapes.
Today Christian tells you how you can prepare a classic afternoon tea, as it is also served in the Disneyland Hotel in Paris or in the Rose & Crown Pub in EPCOT.

Afternoon tea consists of three courses, which are served on a cake stand.
Course 1: sandwiches,
Course 2: Scones with clotted cream and jam.
Course 3: small cakes, fruits and sweets.
Shopping list for 6 people
Scones:
3 cups or 400 g of flour
3 teaspoons of baking powder
pinch of salt
125-150 g (5oz) butter
4 tablespoons of sugar
Variation 1: 100 g (3oz) raisins, 150 ml buttermilk (1 cup)
Variant 2: 1 teaspoon dried lavender flowers, 150 ml buttermilk (1 cup)
some milk to coat the scones
There is also clotted cream and jam
Sandwiches
12 slices of toast
Egg salad with watercress:
4 hard-boiled eggs
1 teaspoon soft butter
3 teaspoons of mayonnaise
1 teaspoon Dijon mustard
Salt, pepper and a pinch of paprika powder.
Avocado Cream and Tomato:
1 avocado
1 lemon
1 tomato
Salt pepper
Goat cheese cream:
Goat cream cheese
50 g walnuts
1 canned pear
served with fig jam.
Alternative ingredients for the clotted cream to make at home:
400 ml whipped cream
Preparation:
Pour 400 ml of cold whipped cream into a saucepan and place in a water bath. A larger pot with water is suitable for this, so that the smaller one stands in the larger pot.
Place the whole water bath on the middle rack in the oven and heat it up at 70 degrees top and bottom heat for between 7 and 8 hours. Over time, a thin skin will form on the surface.
After about 8 hours, take everything out of the oven and put the smaller cream pot in the fridge overnight and let it rest. In the morning, the cream should be spreadable so that it can be used for the scones.
Ingredients for vegan scones
350 g spelled flour
2 teaspoons of baking soda
1 teaspoon baking soda
1 teaspoon apple cider vinegar
1 pinch of salt
125 g vegetable margarine
1 tbsp cane sugar
150 g soy yogurt
some soy milk for brushing
preparation
The dry ingredients are mixed in a bowl.
Add soy yoghurt and vegetable margarine and mix with a dough hook or knead with your hands.
Place the flour on the work surface and roll out the dough (2.5 cm thick).
Cut out the scones with cutters or a glass and place on a baking sheet.
Use a brush to brush the scones with a little soy milk.
Bake the scones in the oven for 15 minutes at 180 degrees.
Ingredients for a vegan clotted cream substitute
½ tbsp agave syrup or 1 teaspoon powdered sugar
3 tbsp vegan cream cheese (e.g. from Heirler)
preparation
Both ingredients are mixed together with a spoon.

SCONES
All purposes flour/maida 250 gm/ 2 cups
Salt 1/4 tsp
Baking powder 1 heaped tsp
Sugar 1 heaped tbsp
Butter frozen 55 gm
Egg 1
Milk cold 150 ml
METHOD
In a bowl take maida, salt, sugar and baking powder.
Mix all dry ingredients with a whisk.
Grate frozen butter into flour mixture.
Mix butter in flour with hands till crumbs like texture.
Now beat one egg and add half of it into flour.
Add cold milk into flour mixture.
Now lightly mix to form a loose dough.
Pour the mixture on to a surface that is dusted with flour.
With hands mould the flour mixture into a disc.
Roll with a rolling pin till the thickness of dough is about 2 cm.
Using a 2 inch wide biscuit cutter, cut scones from dough.
Place scones onto a lined baking pan.
Brush the scones top with the remaining beaten egg.
Bake at 190 degree centigrade for 15-20 mins.
Serve warm scones with clotted cresm and jam.
