Rhubarb Coffee Cake

Ingredients:
- 3/4 cup white granulated sugar
- 3/4 cup light brown sugar
- 2 cups + 1 tbsp flour, separated
- 2 tsp baking powder
- 1 tsp salt
- 1 1/2 tsp cinnamon
- 3/4 cup butter, cold, cut into pieces
- 2 large eggs
- 1 cup sour cream
- 1 tsp vanilla extract
- 2 cups chopped rhubarb
Instructions:
Preheat oven to 350°F. Grease a 9×9 baking dish and set aside.
In a large bowl, combine the white sugar, brown sugar, 2 cups flour, baking powder, salt, and cinnamon.
Add the pieces of cold butter and cut them into the dry ingredients until the mixture resembles wet sand with pieces of butter the size of a pea or smaller. Remove 1 ¼ cups of the mixture and set aside.
To the remaining crumbled mixture left in the bowl, add the eggs and sour cream. Whisk until combined and pour into prepared baking dish. Add the chopped rhubarb on top, sprinkle with the remaining 1 tbsp flour. Top with reserved streusel.
Bake in preheated oven until golden and a skewer inserted into the middle of the cake comes out clean, 40-55 minutes. Remove from oven and cool 15 minutes before serving.

Super Easy To Make And Super Moist - Rhubarb Strawberry Cake - My Favorite Springtime Cake
When I started doing farmers markets I wanted a seasonal cake to sell. I search for awhile and found this cake, Rhubarb Strawberry Cake, on a now defunct recipe blog. I guess the blog is still there but no new post in 11 years. Does that count as defunct? Anyway I loved the cake and so did the customers. In fact I tried to phase it out way too early to have another seasonal cake, but there was a revolt. So now I sell the cake into mid July when another super popular cake come into production. Give this cake a try, you won't be sorry!

Streusel Topping:
Blend together 6 teaspoons butter with 1/2 cup sugar, 1 cup flour, 1/2 teaspoon cinnamon, 1/4 teaspoon baking powder and 1/4 teaspoon salt.
Cake:
Cream together 1/2 cup butter and 1 cup sugar. Add 2 teaspoons vanilla and 1 egg and beat until blended. Add 1/2 teaspoon salt, 1/2 teaspoon baking soda, half of the 1 cup of buttermilk and half of the 2 cups of flour. Beat. Add the remaining buttermilk and four and beat. Fold in 2 1/2 cups Rhubarb. Fill baking pan. Top with 1/2 lbs strawberries chopped and streusel topping.
Bake at 350°F for 1 hour or until done.
Serve at room temperature.
