How To make South Of The Border Eggplant
4 sl Raw bacon
1 md Onion, finely chopped
1 lb Lean ground beef round
1 Clove garlic, peeled and
-crushed 1 md Green pepper, finely chopped
1 md Eggplant, peeled and cut
-into 1/2-inch slices 1 t Salt
1/8 t Pepper
15 oz Can tomato sauce
1/2 c Crumbled feta cheese
1 c Seasoned croutons
1. In a deep, 2-quart, heat-resistant, non-metallic casserole heat bacon,
covered with paper toweling, 4 minutes or until crisp. Reserve bacon fat. 2. Remove bacon. Set aside.
3. Add beef, onion, garlic and green pepper to reserved bacon fat. Heat,
uncovered, 6 1/2 minutes or until vegetables are tender and beef is browned. 4. Add eggplant, salt, pepper, tomato sauce, feta cheese and reserved
bacon. Stir to blend. 5. Heat, covered, in Microwave Oven 8 minutes or until eggplant is tender.
6. Sprinkle with croutons and heat, uncovered, an additional 1 minute or
until heated through.

10 Minute Vegan - Tri-Color Pepper Stuffed Eggplant
Recently, Sharon and I visited South Africa and Zimbabwe. The accommodations were amazing, including the vegan food the wonderful people along the way prepared for us. During our first night in South Africa, our chef prepared a stuffed eggplant that just amazing. This recipe is inspired, though not exactly the same, by that very special anniversary dinner.
You will need:
1 Eggplant
1 1/2 Cups Cooked Jasmine Rice
1/4 Cup Onion
1/4 Cup each color Bell Pepper
4 Cloves Garlic
1/2 TSP Cinnamon
Salt & Pepper
1 1/2 TBSP Olive Oil

Roasted Eggplant and Spinach Muffuletta Sandwich Recipe:
Olive Salad Relish:
1 cup pitted kalamata olives
1 cup pitted green olives
1/2 cup coarsely chopped Italian parsley
4 cloves garlic
1/2 cup sun-dried tomatoes, oil packed or dried and reconstituted
4 tsp red wine or white balsamic vinegar
1 tsp dried rosemary, crumbled
1 tsp dried thyme, crumbled
1 tsp dried oregano, crumbeld
1 tsp dried basil, crumbled
1 tsp celery seed
1/2 cup extra virgin olive oil
Sandwiches:
1 smallish eggplant (less than 1 lb.)
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar
3 cups fresh spinach leaves, washed/spun dry
2 roasted red or yellow peppers, from jar or homemade
1 (9 or 10 inch) round peasant style loaf (about 1 - 1/2 lbs, sourdough is a great choice)
