1 lb Shrimp -peeled
6 tb Butter
1 tb Green onion chopped (or more
1 tb Oil
4 ea Cloves garlic
1 tb Lemon juice
1/4 ts Salt (optional)
2 tb Minced parsley
1/4 ts Grated lemon peel (or more)
1 x Tabasco or crushed red peppe
Melt butter over medium heat. Stir in onion, oil, garlic, lemon juice and salt. Cook till boiling. Pat shrimp dry and add. Cook stirring occasionally till shrimp turn pink (5 min.) Blend in parsley, lemon peel & tabasco. Garnish with lemon wedge. Serve over angel hair pasta or rice. -----

1.5-2 lbs XL Shrimp
3-4 tbsps butter
1 tbsp avocado oil
1/2 cup dry white wine
1 lemon (juice and zest)
1-2 cups pasta water
1/2 cup chopped parsley
1 shallot (diced)
4-5 cloves of garlic (minced)
1 lb fettuccinne
salt, pepper, garlic, onion powder, red pepper flakes, italian seasoning
Directions:
Begin by partially cooking your shrimp in a skillet with a bit of cooking oil over medium heat. (about 1 minute per side) Remove the shrimp with a slotted spoon and add in some butter and oil. Next, add in your shallot and garlic and cook for 2-3 minutes. Deglaze the skillet with dry white wine or chicken stock and bring to a boil. Reduce the heat to a simmer and cook off the alcohol for 3-4 minutes. Cook pasta to package instructions and strain (keeping 1-2 cups of salted pasta water). Add your noodles to the sauce and toss to coat. Add pasta water as needed. Season to taste and add back in your shrimp to finish cooking. Add chopped parsley, lemon juice, and lemon zest to taste. Garnish with parsley and red pepper flakes.

The Best Shrimp Scampi I've Ever Had | Home Movies with Alison Roman
To me, Shrimp Scampi is decidedly about the shrimp, and less so about the pasta (although, HOW FUN ARE THOSE SHELLS?). The important thing here is that you have a lot of saucy, glossy businesses all over whatever you’re serving it on (pasta, rice, more vegetables) or sopping it up with (toast, obviously). Season the shrimp with plenty of salt and pepper before adding it to the skillet– I once did not do this, and it made a huge difference (in a bad way!).
