The Hartley family's easy and delicious sherry trifle recipe: a must-have for all celebrations :)
This was a particular hit with my 93 year old Japanese father in law :)
The Hartley family trifle
There have been lots of different kinds of layered deserts called trifle since the first known recipes were set down in the sixteenth century, many specific to individual areas and tastes, modified over time. This is a version of the one from my father’s side of the family which I still make every year. My mother’s side included jelly (an eighteenth century newcomer) but we never made that for ourselves. It’s very simple:
A layer of sponge or pound cake, spread with raspberry jam (add some fresh or frozen raspberries if you have them) in the bottom of a large dish
Soak the sponge with a sweet/cream sherry (at least one full cup)
Pour a pint of hot custard over it all and let it set (I make that with custard powder and milk, but you can make it from scratch with eggs)
Whip up a pint of heavy/whipping cream and spread it over the top
Decorate with fruit or sprinkles
Chill. Serve. Bask in the boozy deliciousness.
