How To make Shepherd's Pie (Syd)
1 lb Lean Ground Beef
8 oz Hot Italian Sausages *
16 oz Whole Peeled Tomatoes
1 1/2 c Sliced Fresh Mushrooms
1 Clove Garlic, Minced
2 tb Balsamic Vinegar
1 c Frozen Peas
1 tb Chopped Fresh Basil Or
1/2 ts Dried Basil
1 ts Salt
1/4 ts Dried Oregano, Crumbled
Fresh Ground Pepper To Taste 2 lb Potatoes **
3/4 c Milk
1/2 c Grated Parmesan Cheese
6 tb Butter, Room Temp.
* Hot Italian sausages should be cut lengthwise in half and sliced 1/4 inch thick. ** Potatoes should be pared and cut into 1 inch chunks. ~

~-- Place ground beef and sausages in a medium skillet. Cook, breaking up beef, over medium high heat until meat loses some of its pink color and releases juices. Add tomatoes, mushrooms, garlic and vinegar. Simmer uncovered, stirring occasionally and breaking up tomatoes, about 10 minutes. Stir in peas, basil, 1/2 ts salt, oregano and pepper. Simmer 10 minutes. Remove from heat. Meanwhile, boil potatoes in water to cover until tender, about 20 minutes. Drain potatoes and transfer to large mixing bowl. Beat in milk, cheese, butter, remaining 1/2 ts salt and pepper to taste; continue to beat until smooth. Heat oven to 350?F. Spoon meat mixture into 2 quart shallow casserole. Spoon potato mixture on top and spread evenly to edge. Bake until golden and bubbling, about 45-50 minutes. Let stand 10 minutes before serving. Serve hot. 436 calories per serving. Shot before a live studio audience, Just Like Mom and Dad is a hilarious and fun-filled game show that celebrates and rewards families for how well they know each other. Each episode features three teams of parent-kid pairs that are all trying to accumulate the most points after three rounds of family fun.
The first two rounds include asking and answering personal questions that puts the family dynamic to the test. A third round features the infamous “Bake Off” and “Taste Test” where the kids whip up a dish (with some surprise ingredients!) they hope their parents will love. The parents must taste these culinary creations and guess which dish was prepared by their child. At the end of all three rounds, the team that has earned the most points gets to spin the Just Like Mom and Dad Prize Wheel!

4 large potatoes (about 1.4 kg) peeled and roughly chopped
100ml lite thickened cream
20g butter
Salt & pepper
1 white onion, peeled and diced
2tsp garlic paste
450g beef mince (for cottage pie or lamb mince for shepherds)
2 carrots, peeled and diced
1 x 28g packet gravy
1 cup (250ml) water
1 cup (150g) frozen peas

SHEPHERD’S PIE

Gorgeous and warming on a cold wintery night, this Shepherd’s pie is easy and quick to make, tastes gorgeous and will hit the spot. Use really good quality beef or lamb and floury potatoes, you want the topping to be really thick and rich.
INGREDIENTS
• 1 tablespoon extra virgin olive oil
• 1 brown onion, finely chopped
• 2 garlic cloves, crushed
• 1 carrot, finely diced
• 1 celery stalk, finely diced
• 1 teaspoon fresh rosemary leaves, finely chopped
• 500g lamb mince (I used beef mince)
• 2 tablespoons plain flour
• 1 tablespoon Worcestershire sauce (* note at bottom)
• 2 tablespoons tomato paste
• 2 cups beef stock
• 800g cream delight potatoes, peeled, chopped
• 1/2 cup milk
• 50g butter
METHOD
Heat oil in a frying pan over medium heat. Add onion, garlic, carrot and celery. Cook, stirring, for 8-10 minutes or until softened. Add rosemary. Cook for 1 minute or so or until fragrant. Increase heat to high. Add mince and break up mince and continue to cook for 6 to 8 minutes or until browned.
Add flour. Cook, stirring for 1- 2 minutes. Add Worcestershire sauce and tomato paste. Cook, stirring, for 1 minute. Add stock. Bring to the boil. Reduce heat to low. Cook, stirring occasionally, for 25 to 30 minutes or until thickened. Season with salt and pepper to your own personal liking.
Meanwhile, place chopped potato in a large saucepan. Cover with cold water. Bring to the boil over high heat. Cook for 10 to 12 minutes or until tender. Drain. Return to pan over low heat. Add milk and ½ the butter. Mash until smooth.
Preheat oven to 200C/180C fan-forced. Spoon mince mixture into an 8 cup-capacity baking dish. Top with mash, using a fork to spread out over mince mixture. Dot with remaining butter. Bake for 20 minutes or until golden.
Refrigerate any left overs, easily reheated in Microwave next day.
• Note: If you are out of Worcestershire sauce, you can make your own with these basic ingredients if you have them on hand.
• 1/2 cup apple cider vinegar
• 2 tablespoons Thai fish sauce
• 2 tablespoons honey
• 1 tablespoon molasses
• juice of one lime
• 1/2 tsp ground clove
• 1/2 tsp onion powder
• 1/4 tsp garlic
• 1/4 tsp of chili powder
