How To make Sharon's Minestrone
2 tb Vegetable oil
1 c Chopped onion
2 Garlic cloves, finely
-chopped 6 Bacon slices
1 c Chopped celery
1 c Chopped carrots
2 c Beef stock
1 c Tomato juice
1 (14oz) can kidney beans,
-drained 2 ts Basil
1/2 ts Oregano
1 c Barley
2 tb Chopped parsley
salt and pepper to taste In a large saucepan, saute onions and garlic in vegetable oil. In a small frying pan, cook bacon, drain off fat and cut bacon into small pieces. (To save a step, I cut the bacon into bite size chunks first and then cook them in the same pot that the soup is going to be in. Gives it a bit more flavour. Just drain off excess fat.) To the saucepans,add bacon, celery, carrots, beef stock and tomato juice; cook until vegetables are just tender, about 10 minutes. Add the rest of the ingredients and cook until barley is tender, about 20-30 minutes. Serves 6-8. Origin: Sharon Stevens Shared by: Sharon Stevens

1 Large Onion
How to cut an onion without crying -
2 Carrots
2 Celery Ribs
1/4 tbsp Tomato Puree/Paste
1/2 Leek
1/4 Cauliflower
Handful Sugar Snap Peas
Handful Green Beans
Handful Mangetout
Handful Spinach
1 Red Pepper
4 Garlic Cloves
1 Can Chopped Tomatoes
1 Cup Pasta
1 Tin Cannelloni Beans (or Chickpeas)
3 Pints of Stock
Salt & Pepper
1/2 tsp Oregano
1/2 tsp Tyme
Pinch Red Chilli Flakes
3 - 4 tbsp Olive Oil

How To Cut an Onion without Crying
Souper-Hero Minestrone
Ingredients:
1 onion
1 carrot
1 celery stick
1 small courgette
1 garlic clove
1 tbsp sunflower oil
150g diced pancetta or bacon lardons
600ml chicken or vegetable stock
400g can chopped tomatoes
400g can chick-peas
50g small dried pasta shapes (or 25g if really tiny)
50g spinach
Large handful fresh basil leaves, optional
25g finely grated parmesan
Sea salt and freshly ground black pepper
Method:
1. Finely chop the onion, carrot, celery and courgette and crush the garlic. Heat the oil in a large pan on a medium heat and saute the prepared vegetables and pancetta for 4-5 minutes until beginning to soften and catch colour.
2. Add the stock, tomatoes, chick-peas, pasta and seasoning to the soup and bring to the boil. Reduce to simmer for about 10 minutes or until the pasta and vegetables are tender.
3. Meanwhile, roughly chop the spinach and then stir it in last minute with almost all of the basil (if using) until just wilted and remove from the heat.
4. Serve straight away garnished with the remaining basil (if using) and a little parmesan if liked.
